History

The cocktail was originally made with Sazerac de Forge et Fils cognac, which was imported from France and served in a special glass rinsed with absinthe. Over time, rye whiskey became the preferred base spirit, and the absinthe rinse was replaced with a few drops of Peychaud's bitters. Today, the Sazerac is considered one of the quintessential New Orleans cocktails and is enjoyed by locals and visitors alike.
You will need
- 2 oz rye whiskey
- 1 sugar cube
- 2 dashes Peychaud's bitters
- Absinthe or absinthe substitute
- Lemon peel
Instructions
In a mixing glass, muddle the sugar cube with a few drops of water until it dissolves.
Add the rye whiskey and Peychaud's bitters to the mixing glass and stir well.
Rinse a chilled rocks glass with absinthe or absinthe substitute, discarding any excess.
Strain the whiskey mixture into the rocks glass.
Twist a lemon peel over the drink to release its oils, then garnish with the peel.
