Slow Cooker Recipes - Lamb with Figs Recipe for the Slow Cooker
Why try this recipe?
Ive always wondered what to do with figs? I'm not exactly a fan of them on their own but I have tasted them in a few dishes, so had thought about trying to cook them my self. After a little bit of recipe hunting I stumbled on a recipe for a lamb and fig tagine which I could cook in my slow cooker. I altered it for our personal tastes and this recipe is what we came up with.
I love my slow cooker and love how much easier it makes making a good hearty healthy meal. As me and my husband have very busy hectic lives having a slow cooker is an absolute life saver. Plus to go one step further this meal can be made up as a freezer meal, so can be prepared then frozen in advance, and just added to the slow cooker on the morning you wish to cook it.
This recipe when made in a slow cooker leaves the lamb so soft it literally falls apart, it is so tender. The sauce has a sweet taste to it thanks to the figs and cinnamon. The dish is very filling and will go down well with the the whole family.

Ingredients
- 750g lamb, diced into small chunks
- 1 onion, diced
- 2 cloves or 1tsp garlic, crushed or lazy
- 1 inch ginger root, finely chopped
- 2 tbs plain flour
- 600ml (1 pint) lamb stock (or veg)
- 1tsp ground cinnamon
- 100g dried figs, de-stalked and chopped
- oil
- Enough for 4 Couscous, to serve
- Toasted almonds, optional
- Heat a little oil in a pan and add the lamb chunks slowly. Fry over a high heat until all the meat is browned. Then using a slated spoon add the meat to the slow cooker.
- Add the onions to the same pan and fry until beginning to brown.
- Add the garlic and ginger, then sieve in the flour and slowly add the stock. Stirring gently.
- Add the chopped figs and ground cinnamon. Plus a little salt and pepper if you wish (I don't use any salt and pepper at all in my cooking) Then bring to the boil while stirring.
- Add entire mixture to the slow cooker and mix together well. Leave to cook on low for 8-10 hours or high for 4-5.
- Serve over Couscous and sprinkle with touted almonds, if you wish!
Alternatives
- This dish could be served over rice or potatoes instead of Couscous
- You could try adding some veg to the dish to make it even healthier. Carrots and mushrooms would be great
- The original recipe also added a tsp of saffron, but I didn't have any at the time and don't think it really needs it.

I like couscous with lamb, and figs make it that much more delicious. This recipe is easily adapted to stove-top or oven if you don't have a slow-cooker. I should have one after Christmas.

It'll taste just as good over rice, we just went with the moroccan theme and had couscous. THe dish is really yummy!
