If you have iTunes backup, you can recover the lost data from it, but the current data would be replaced. So it is better to use a data recovery tool to recover the lost data only. Hope this method can help,

Sorry for the delayed reply. If you have already connected your new version iPhone with the iTunes, which in all probability is the case, after changing over from the old version, the iTunes has taken new backups of your iPhone overwriting your old backups. There is, therefore, no chance to get back your pictures and videos unless you have taken copies of the old backup files created by iTunes in your computer containing all the data of your old iPhone.

Aren't the photos saved in the iTunes backup? It may not have all of them, but when you back up your phone I think if you restore from a previous backup then you could possibly retrive them. I may be wrong, but I read somewhere a long time ago that it was an option. Have you ever backed up; not sync'd but backed up?

As you know, each time you synchronize your iPhone with iTunes, the latest data on your iPhone are automatically backed up by iTunes in your computer in a special backup file that gets continuously updated along with iTunes synchronization.
It appears from your comment that you continued to use your iPhone after deletion of your photos, which means the iPhone was connected/ synchronised with iTunes even after loss of your data. The iTunes has, therefore, taken new backups of your iPhone overwriting your old one. Since you did not take any copies of the old backup files in a separate location or in some external drive there is no chance to get back your lost data.

iTunes doesn't automatically sync with iPhone when connected. Attach your iPhone to iTunes and Back up by selecting Preferences Backup from iTunes. This will let you to restore any data you have backed up, counting the deleted photos.

No matter your iPhone device is broken or damaged or your data (including the videos and photos) have been erased for long time, there are free software, which can get all of them back easily by extracting from iTunes Backup File. There are two ways for you to recover your deleted folder from iPhone. First, you can use a third-party tool like 'iphone backup extractor' to directly scan and recover your folder.
