Many users are angry about the latest Apple iOS Big Sur. Many have have indicated that it was rushed out just to compliment their new M1 CPU chip and was not fully tested or flushed out, especially when it comes to printer support, which is non-existent. If you have bought a newer Mac desktop or laptop with Big Sur installed, you will most likely have to install a printer driver for your specific printer type.
Many HP and Canon (and others) simply do not provide these drivers for a variety of reasons, one is that, Big Sur is a different beast than previous iOS'. Thus, drivers that did work with previous iOS 11.0 versions, will no longer function. Forum after forum will have user complaints regarding how to fix the issue IF your printer support does not provide a solution that actually works. Trying to this figure out in the iOS world is a maze-like endeavor, especially for those use to Windows 10 (which supports so many print drivers).
While Big Sur (11.0) is fairly new, already there is a newer 11.2 version for 2021, that may address many of the print driver issues.
What To Do
If your print driver does not work, go online and visit the many Apple forums to see what others have done and what issues remain. But, the easiest way is to to first go to the printer manufacturers website and locate where you can download a print driver for your specific model.
Next, even if you find one for your printer for Big Sur iOS (11.0, 11.1, 11.2), you might try instead either iOS 10.9 (Maverick) or iOS10.15 (Catalina) instead. The reason being that sometimes earlier versions are compatible with Big Sur and the actual Big Sur print driver for your printer is NOT! (I know, I have a Canon ip100, about 12 yrs. old and the Big Sur driver did not work but the 10.9 version did!).
If the two alternatives do not work, try other earlier versions. Lastly, if the issue cannot be fixed, Apple will do nothing to help you, so do not waste time communicating with them. Many have dumped Big Sur and returned to Maverick or other earlier versions just to have use of their printer!
