How To Store Honey

So, your honey has crystallized? Don't toss it, read on.

Honey has to be stored properly to maintain good consistency and quality. Always store honey in a closed container, airtight. Make sure it's stored in a dry location, at room temperature about 70-75 degrees. Honey tends to absorb moisture, which can denature its quality. Too high temperatures will also denature honey. Cool is better. During storage, honey will naturally gradually becomes a darker color, and slightly changes composition.

For longer-term storage freeze honey in the freezer. Freeze in an airtight container. Freezing honey for a short time (2 months) completely preserves all the natural goodness of the honey. But must be stored airtight, otherwise may not hold its smooth clear texture.

Do not store honey in the refrigerator. Refrigerator temperatures cause honey to crystallize very quickly.

Has your honey crystallized? If honey crystallizes, remove the lid and place the jar in warm water until the crystals dissolve, stir it a few times while in a warm water bath. You can also dissolve the crystals by heating the honey in the microwave oven. Nuke it for 15 seconds, repeat if needed. Be careful not to burn or scorch the honey. Don't over nuke.
