Celebrate Purim Vegan Style!
The fun and farcical Jewish holiday of Purim is celebrated each year in February or March. It commemorates the story of the foiling of a plot to kill the Jewish population of a town in ancient Persia. The story itself has little historical evidence to support it, and many consider it to be the first written example of Jewish parody.
Hamantaschen is the food associated with the celebration of Purim. Hamantaschen are triangle-shaped cookies with a fruit filling. This is traditionally a prune-based filling, though jelly, pie filling, or chocolate chips all make delicious and easy substitutes for the more involved homemade prune filling.
Here is an excellent vegan dough for hamantaschen. I'll also share my great-grandmother's prune filing recipe!

Prep Time: 3 hours, 15 minutes (NOTE: 3 hours is refrigerating the dough)
Total Time: 4.5 - 5 hours
Serves: Makes 15-20 cookies
- 2 cups all-purpose flour
- 2 cups whole wheat flour
- 2 -4 tbsp sugar, to taste
- 1.5 tsp baking powder
- 1/3 cup canola oil
- 2/3 cup water
- 1/2 cup applesauce
- 1 tsp vanilla extract
- 1 tsp almond, orange, or lemon extract - or more vanilla extract
- Approximately 5 tbsp of filling
- Mix all ingredients EXCEPT THE FILLING together in a large bowl.
- Knead for a few minutes. Add more flour if necessary.
- Divide dough into 3 balls.
- Refrigerate the dough for about 3 hours.
- Preheat oven to 350F.
- Sprinkle work surface with flour. Roll balls out to 1/8-inch thickness. (Work with a portion of the dough while leaving the rest in the refrigerator.) If dough seems too wet, add flour; if it seems dry, add a little water.
- Cut approximately 15 4-inch rounds. To do this, sprinkle the top of the dough with flour, then use a drinking glass as a "cookie cutter" to create circles of dough.
- Place approximately 1 tsp of filling in the center of each round, then shape dough into triangles so that the filling appears in the middle of the triangle. Wipe the edge of the dough with water using your fingertip to help the triangle stick together.
- Bake at 350F for 20-25 minutes, until dough is lightly browned.

Traditional Hamantaschen Filling Recipe - My Great-Grandmother's Recipe
If you have the time to make an authentic, healthy hamantaschen filling, this is a delicious choice!
Don't worry - most of the prep time is just soaking the dried fruit.

Filling for numerous hamantashen
- 1 pound prunes, soaked for 3 hours
- 1 cup raisins, soaked
- 1/2 cup chopped nuts - walnuts or pecans work especially well with this recipe
- Juice from 1/2 lemon, plus a bit of ground rind
- 1 tsp cinnamon
- 1 cup sugar
- 1 apple, grated
- Use a food processor to chop the first 3 ingredients, SEPARATELY.
- Mix the processed prunes, raisins, and nuts together in a large bowl.
- Add all of the remaining ingredients and mix thoroughly.
- Place approximately 1 tsp of filling in the center of prepared hamantaschen dough before baking the cookies.

All formulas look really yummy! I would love the original, but the cook, my daughter, would be making the one with applesauce. She does make something like this with the refrigerated crescent roll dough and chopped apples with the same spices. Great recipe lens!
