My mother-in-law was "old school." She was a cook that used nothing but real butter and cream in everything she cooked. I know she would have been fast friends with Paula Deen. Needless to say, her cooking was incredible and eating was always an event.

Holidays were spectacular. Following the tradition of "fine Mormon cooking", she put a spread on that could rival any master chef of today. She loved to cook. She loved to entertain using food. She simply "enjoyed" her food. She left her family with a legacy of fine recipes to continue the tradition of holiday cooking.

Cherished Family Recipes

I have decided to share two of her traditional favorite holiday casserole recipes with my "HUB page family." Cherish these delicious masterpieces and start a holiday cooking tradition. They will enhance your holiday table and make your meal unforgettable, I promise!


Gourmet Carrot Casserole

4-5 lbs carrots, peeled and cut in thing strips

1 Tbsp. horseradish

½ tsp garlic powder or salt

½ tsp. lemon pepper

2 Tbsp. grated onion

2 cups mayonnaise

1 cup grated Cheddar cheese

2 handfuls of crushed potato chips

½ cup Jack cheese, grated

Boil carrots until nearly done, still crunchy, about 10-15 minutes. Drain.

Combine in bowl: mayonnaise, ½ cup cheddar cheese, and seasonings.

Butter a 9x13 pan, and layer the casserole in the following way:

½ the carrots

½ sauce in bowl

Cheddar cheese

½ the carrots

½ the sauce

Crushed potato chips

½ cup Jack Cheese

Put the casserole in the oven and bake at 325 degrees for 30 minutes, uncovered. This is great if prepared a day ahead of time so that when you need to be fixing other main entrees you can just pop this in the oven and it will be ready when the rest of the meal is.


Holiday Broccoli

3 Packages Frozen broccoli florets

2 cans Cream of Chicken Soup

¼ cup mayonnaise

½ cup sour cream

Juice of one lemon

1 Tbsp curry powder

½ cup bread crumbs

2 Tbsp of melted butter

Combine in bowl: soup, mayonnaise, sour cream, lemon juice, and curry.

Cook the frozen broccoli until it is tender, but not mushy.

In a 9x13 pan put cooked broccoli, and cover with soup mixture.

Combine bread crumbs with melted butter until crumbly but not clumpy, if needed add more bread crumbs, and then spread on top of the casserole.

Bake at 350 degrees for twenty minutes until bubbly.

Another great make ahead casserole.

They go great with both turkey and ham, and compliment even beef as a main course. If you serve them for Thanksgiving, your family will be begging you to serve them at Christmas too!

These recipes are so good. Every time I fix them I think of the love my mother-in-law had of cooking, and how she would just live to pleasure us with these treats! My kids still ask for them, and expect them as traditional food, especially during the holiday seasons. They are yummy!

Thanks for all that info. I guess she must have changed quite a bit. I will have to admit she is flirty, but that sort of adds to her "southern" charm. She cooks the way my mother-in-law did, butter, cream, and chocolate. lol

Well her show was totally different.  first just her then added her son's and we went through them getting married and she brought on the new wives..then she got married again and we heard her life story ( which is very interesting ).then her boys took off on their own show.

Then she got an evening show..Now she is doing quick meals..and has added drinks to the show..which a lot of them have but they are copying oh heck my mind went blank simply homemade? and then we saw their honeymoon and other trips.  Next will be her grandchildren.I really don't mind but the show has changed a whole bunch. she has added music too on her late show where she has other stars appear and what a flirt..

I love her tho don't get me wrong.  I guess cause I am so simple it seems funny when they change so much. Now she wears a lot of make-up and dresses very differently and was even in a movie..which we all got to hear about on the older shows.  Actually she is quite a woman all in all. and a great cook.  G-Ma :o) hugs

In what way do you think she has changed? I have only become a viewer as of recently. I know that Emeril has added musicians, not to my taste however, marketing I guess.

I have watched her since she first was on T.V. cooking and she has changed a lot..but I think it is the networks doing's to keep people watching. same with Emeril live..they changed him very much..and then added musicians..I guess it is necessary..Even so they are good cooks and I have tried several of their recipes to my satisfaction anyways.
