Herring - Pickled and a Holiday Tradition
Holidays are celebrated with a variety of food, and pickled herring is a traditional food at this time.
Herring that has been soaked in a salt and vinegar solution for a week, then soaked in a vinegar, sugar, spices and wine mixture for a couple of days.
Herring, after pickled has a firm texture. The mixture of flavors is sweet, tangy, salty. Sometimes there is onion mixed with the fish. Sometimes sour cream. Sometimes pepper sauce.

These are in wine sauce. The wine used is generally a inexpensive brand. Our favorite used to be Thunderbird. Lately, it has been Silver Satin.
We make our own, but we like the butcher shop variety.
