How to Make Eggnog - 3 Easy Homemade Egg Nog Recipes for Christmas and New Year's Holiday

Is egg nog just for holidays?

Every year, when I drink egg nog around the Christmas or New Year's holidays, I wonder why I only have it once a year. I really like egg nog, but perhaps it's too heavy of a drink to have very often. There's no reason, though, I couldn't make it now and then throughout the year.

Store-bought or Homemade Egg Nog?

I don't wait with anticipation for egg nog to appear on the grocery store shelves, as that stuff in the carton--the thick, sweet concoction they call egg nog--does not appeal to me. I find it too thick and too sweet--sickly sweet. I usually buy it once at the Christmas season to again try it or serve it for guests. With whatever is left of it, I add milk to it to thin it and de-sweeten (I love making up words) it. If you use creamer and sugar in your coffee, it also is quite tasty in lieu of those things in your coffee. Try it! Egg nog flavored coffee. The nog mixes with the coffee to make a yummy, creamy hot drink.

I prefer a thinner egg nog that is eggier. If eggier isn't a word, it should be. There is nothing that resembles the taste of eggs in store-bought egg nog. Years ago, when I started making homemade egg nog at my Christmas parties, complete with real eggs, it was a hit and wouldn't last long. Guests started asking for it the following years at my annual Christmas parties. The taste and consistency is so different from what is offered in the stores.

Here I'll offer up three recipes I've tried over the years. You can make them with real eggs or egg substitute, if the fear of salmonella is an issue. You can also choose to create an egg nog higher or lower in calories depending on the milk products you use.

While none of these egg nog recipes include alcohol, it is a common practice for recipes to include some type of alcohol. Of course, that is an option. I never added alcohol at my Christmas parties but had some available if individuals wanted to add it. Rum, whiskey, or brandy are usual choices. I've found that just a touch of rum adds a nice flavor but adding too much more than that takes away from the delicious flavor of the egg nog.

Is salmonella a real issue with eggs?

According to, your chances of contracting salmonella through an egg is the same as with any other perishable food item. How does .005% sound to you? Your risk is five thousandths of one percent! I can just as easily get salmonella from the raw broccoli I eat, so, for me, I'll take my chances.

Real eggs make egg nog taste so much better! If the thought turns you away, though, you can purchase a carton of egg substitute. One cup is equal to about four eggs. I have used this before with groups when I knew the egg issue might become . . . an issue.


Egg Nog Recipe #1: Thick and Sweet

This recipe I put together resembles the store-bought version more closely than do the other two recipes. Perhaps it's because of the thick, sweetened condensed milk that the recipe calls for. If you like egg nog from the grocery store, then this homemade egg nog might be your choice.

  • 6 eggs, beaten (or 1 and 1/2 cups egg substitute)
  • 4 cups milk (I used 1% but any will do)
  • 1 can sweetened condensed milk
  • 1 cup heavy whipping cream
  • 1 tsp. vanilla extract
  • 1 tsp. nutmeg

Mix all ingredients together and whisk until frothy. I found this version too sweet for my tastes and had to keep adding extra milk and eggs. Still, it does resemble the egg nog purchased in a grocery store.

Egg Nog Recipe #2: Light and Cheap

This egg nog recipe has been my basic one to follow over the years. It's pretty simple and doesn't use the more expensive ingredients, such as sweetened condensed milk and heavy whipping cream. Without those two additions, besides being inexpensive, this egg nog is also much less fattening.

Using 2% milk and serving ten people, a small cup of this egg nog would have fewer than 100 calories and 3 grams of fat. On the other hand, recipe #1 packs nearly 300 calories and 15 grams of fat. I personally prefer the lighter taste . . . on my taste buds as well as my waistline. I have even used sweetener in this recipe instead of sugar.

  • 6 eggs, beaten (more eggs in this recipe as we've established that I prefer eggier!)
  • 3 cups milk
  • 1/4 cup sugar (or to taste)
  • 1 tsp. vanilla extract
  • 1 tsp. nutmeg

Whisk until smooth and frothy. This recipe has received many compliments over the years. You can adjust the amount of milk for thickness and add to the recipe if you're expecting a crowd.

Egg Nog Recipe #3: A Happy Medium

This is a good, tasty egg nog recipe that is perhaps a happy medium as far as calories and cost.

  • 4 eggs, beaten (or equivalent)
  • 3 cups half and half
  • 1/4 cup powdered sugar
  • 2 Tbs. granulated sugar (adjust sugars to taste)
  • 1 tsp. vanilla extract
  • 1 tsp. nutmeg

Whisk until smooth and frothy. This combination turned out well. I recently made it with egg substitute instead of real eggs. Although I liked the taste, it wasn't eggy enough for me, so I plopped in a fresh egg on top and whisked it in. Not only did I like the taste better, but the texture was more to my liking. There is just something about real eggs in egg nog. Nothing compares. Just the one fresh egg gave this batch enough of an egg flavor without being too eggy, a taste that, when overpowering, might turn some folks off.

My husband loves egg nog from a carton. I don't like it at all but would very likely like homemade egg nog and I bet he would too. Your recipes look good.

I remember making the kids orange julius when they were young using eggs never hearing anything about eggs having salmonella. I still make egg whites for my pies and desserts.
