A Vegetarian Thanksgiving

I have been a vegetarian and still embrace vegetarian meals.

The Vegetarian Meal

Turkey is a common Thanksgiving main dish. However, you can prepare an excellent meal and do so without turkey or any other meat, fowl or fish.

Sweet potatoes, green beans, potatoes, apples and cranberries, all can complement a vegetarian dinner, and are also traditional Thanksgiving foods. You can include all or any of them in the meal, if you need to bring the traditional touch to your menu.

You can also wander away from the traditional items and design your own vegetarian Thanksgiving dinner. The purpose of this Thanksgiving meal is to give thanks, for example, Christians give thanks to God, but pagans also celebrate Thanksgiving. For many pagans Thanksgiving is a Harvest festival when the fruits of past labour are shared, enjoyed and words of appreciation are spoken.

As long as you give thanks, and it is your choice to whom you give your thanks, then you are keeping the spirit of the meal alive. What you serve is a personal choice.

Over the years we have had a traditional thanksgiving with turkey and all the trimmings and we have had a vegetarian feast with vegetarian lasagnaor stir fried rice with baked sweet potatoes. Lately my taste for turkey is waning and my interest in vegetarian options gaining.

A relatively quick and very tasty meal is a mushroom fried rice and sweet potatoes covered in a tomato sauce. I use only two tablespoons of sauce over the sweet potatoes and it brings out the flavour and adds a depth to the meal.

Apple pie and a slice of extra old white cheddar cheese make this a complete and very tasty meal. You can serve a dry red wine with it and enhance the dining experience.

Mushroom Fried Rice:


1- 2 cups of parboiled rice, already cooked

2- 10 button mushrooms sliced fine

3- Tsp olive oil

4- 1 small green pepper diced

5- 2 shallots sliced

6- 1 tsp sesame oil


1- put olive oil in skillet

2- heat

3- Add onions. stir

4- add green peppers, stir

5- add mushrooms, stir

6- Cook 3 minutes on high

7- Add rice, stir

8- Add sesame oil (optional) stir

9- Cook 3 minutes

10- Serve.

You can put rice over the sweet potatoes or serve as side dish. Hot sauce or soy sauce are optional. I enjoy adding both.

It is the spirit of the occasion that matters and not the choice of foods that you prepare. Gather with family and friends if possible and enjoy.
