Benefits of Tibicos Mushroom or Water Kefir With Recipe

Tibicos? When I was first introduced to this “strange” spongy transparent gelatin-like substance, I was quite confused over the many names that I came across after searching the Internet.

The more I searched, the more confused I became. Finally, I decided to stick to my favorite website, Wikipedia, which has two separate articles on this substance. One is tibicos and the other is kefir. From there I tried to form some sort of a logical conclusion.

Asians tend to refer this substance as tibicos, more specifically as tibicos mushroom. Please bear in mind that it is definitely not the typical mushroom. Tibicos is believed to have originated from Tibet.

Most people from the west call it kefir, and attribute its source from the Caucasian mountains, between the Black Sea and the Caspian Sea.

Both tibicos and kefir are considered a probiotic drink containing a complex structure of good bacteria and yeast in a matrix of proteins, lipids and sugars.

Probiotics refers to the healthy bacteria which feeds on the “bad” unhealthy bacteria in our stomach and intestines.

By whatever name we may call it, I believe that they are similar, or at least from the same “family.“

So let us get the name right. And it has so many names across the globe.

Here are just a few names for this “mysterious and miraculous” substance: Tibicos, tibicos mushroom, tibicos life grains, tibis, kefir, milk kefir, water kefir, kefir grains, kefir life grains, sugar kefir grains, kefir yogurt, kefir fungus, Japanese water crystals, California bees, beer seeds, ginger bees, Tibetan mushroom, and Chinese snow lotus or xuelian, or xue lian flowers (Xue Lian Hua ~ 雪莲花).

The photo showing the tibicos mushroom on the top right corner was taken by me. You would notice the brown color instead of the whitish color as shown in some other sites. This is due to the concentrated brown sugar used for my “special” recipe that you will find at the end of this article.

Kefir comes in two “different” types: milk kefir and water kefir. The former is by using milk. And the latter, water. Some people consider these two as different types of kefir. I think they are similar, but I stand to be corrected.

Whatever they are, we are more concerned with the efficacy of this substance, which I choose to call Tibicos mushroom. It looks like little cauliflower florets but in transparent jelly-like form.

It feeds on milk or sugar solution to form a culture of bacteria and yeast. The end-product of this mixture is the tibicos mushroom drink, be it in water-base or milk-base. The alternative names are water kefir and milk kefir. In this article, it is this drink in water-base form that we will focus on. Some call it a “live-cultured” drink.

Tibicos mushrooms contain healthy minerals and vitamins, plus all the good bacteria. They contain phosphorous, magnesium and calcium, the vitamins B, C and K, plus amino acids.

In short, tibicos mushroom is a powerful health drink that gives vitality to the body as well as cures many ailments. It is touted to be the best antioxidant-probiotic drink ever available!

The kind person who introduced me to tibicos mushroom was suffering for months of joint pain around the knees and ankles. The pain was so intense that he walked with a limp.

After taking the tibicos mushroom drink the intense pain eased so much that he was able to walk properly. His bowel control also improved. His numerous trips to urinate during the night were also drastically reduced. This is perhaps the best proof of the potency of tibicos mushroom drink. It is this positive improvement in this person's health in such a short period that convinced me of the potency and effectiveness of tibicos mushroom.

It took me many weeks of research on the Internet for more information plus more weeks preparing my first tibicos mushroom drink and more weeks to complete the whole course of consuming the cultured drink, and monitoring its effects on me. Now I am ready to share this fantastic and effective drink.

As for me, my immediate positive body reponse after drinking tibicos drink was my greatly improved bowel control.

What is so special about my “special” recipe for tibicos mushroom drink? The advantage of this special recipe is that it saves you a lot of time in preparation.

The usual recipes require you to prepare it everyday.

My special recipe is for making a tibicos mushroom concentrate. You then take a tablespoon of the concentrate once first thing in the morning and once at night before going to sleep.

This special recipe will last you more than 20 days. This is many many times more convenient than preparing it everyday!

Below is my special recipe, and it is very simple as well:

Ingredients:

  • 1 liter of pure water, or filtered water
  • 250 grams of tibicos mushroom
  • 250 grams of brown sugar or jaggery powder (choose the darker colored variety)

Never use metal utensils or metal containers. Use only plastic or glass utensils and containers.

Methods:

  • Put the 250 gm of brown sugar into a 2-liter plastic or glass container.
  • Pour in the 1 liter of water.
  • Stir until the brown sugar dissolves in the water.
  • Put in the 250 gm of tibicos mushroom.
  • Gently stir the mixture.
  • Cover the container with a perforated cloth. (The tibicos mushroom needs air.)
  • Place the container in a cool place for 3 days. (If scum-like substance forms on the surface, gently scoop it out and discard together with the grains that are stuck on it.)
  • After the third day, pour the mixture through a plastic sieve into another plastic or glass container.
  • You will have about 800ml (3 cups) of the tibicos mushroom concentrate.
  • Keep this concentrate in the fridge at all times.
  • By now the tibicos mushroom would have increased to about 650gm!
  • Keep the tibicos mushroom in the fridge for another round of concentrate.

What If It Does Not Activate?

If the mixture shows no sign of bubbles coming out after a few hours, try adding 4 slices of ginger to it. Failing that, sprinkle a wee bit of sodium bicarbonate (or baking powder) onto the mixture.

Normally this would do the trick. If there is still no response, add more sodium bicarbonate and stir a bit. Repeat this a few times if there is no sign of activity.

In the event there is still no activity in the mixture after one day, try this last resort: discard the liquid, wash the tibicos mushroom, and start all over with new ginger slices and the sodium bicarbonate.

So far this last resort has not failed me. Once in a while, remember to give the container a slight shake or just lightly stir the mixture with a wooden or plastic spoon, to agitate and activate the tibicos mushroom.

For some unknown reasons, nowadays my tibicos refuse to come alive. I have to resort to the above actions.

Directions for Consumption:

  • Each morning upon waking up take a tablespoon of the concentrate on an empty stomach.
  • Follow this by drinking at least a glass of plain water. You must remember to drink this glass of water immediately, because you have taken the tibicos culture in a concentrated form.
  • At night before going to bed, do likewise as in the morning.
  • Follow this instruction for the whole duration until the concentrate is finished.
  • This would take you about 25 days.
  • Then take a rest for about a week, and start the process again.

The tibicos concentrate taste like wine. I am not a wine drinker, but I think it tastes like wine to me.

So if you are a wine connoisseur, you may specially like this concentrate. But always remember to drink plenty of water immediately after taking the concentrate.
