Ingredients needed

• Raw sugar.

• Fresh Blueberries (1 cup)

• Baking powder (3 teaspoons)

• All-purpose flour (1 cup)

• Whole Wheat Flour (1 cup)

• Canola Oil (1/2 cup)

• Lemon (1 each)

• Salt (1 teaspoon)

• Egg (1 each)

• Skim Milk (3/4 cup)

• Granulated Sugar (1/3 cup)

Step 1

The Basics

The temperature of your oven is important for a quality product so in order to avoid some of the differences between one oven and another; you may wish to consider purchasing a special oven thermometer. This will ensure that your oven is actually set at the correct temperature. Your oven will need to be set at 400 degrees so keep that in mind when you use your thermometer. If you do not want to purchase muffin cups, pan spray will be just as good, other than the fact that you will not have anything to hold it in when it is ready to serve.

When you get ready to measure your ingredients, there are a few steps you can take to improve the taste and texture of your finished product. For instance, measuring your flour should be done loosely, in a dry measuring cup, and not packed into the cup. Packing the flour will only take away from the fluff in your muffin. Personal preference should also be the norm when choosing flour, especially wheat flour, as there are different kinds of flour available. Allow the egg to come to room temperature before using it to make the dish.

Preparing your lemon

When you add lemon to a recipe, the addition can take on a few different forms, but when you choose your lemon, you should make sure that it is of the highest quality. Fruits and vegetables are handled by many people in the market before you end up with it, so spend a few minutes washing and removing any blemishes you might run across. If you do not already own a Microplane zester, it is possible to use the small setting of your grater to zest your lemon, taking care not to zest it past the yellow. With your muffin mixture ready to go, use your scoop (an ice cream scoop works well) and measure your portions in each of your muffin liners, maintaining the same amount for each portion. Take your raw sugar and sprinkle it lightly on top of each muffin for appearance only. Your oven should already be up to temperature so the only thing left to do is to place your muffins in the oven to be baked. The baking time for these muffins are supposed to be anywhere between 18 and 20 minutes, or until golden brown. Once again, keep in mind that ovens bake differently, so combine temperature, time, and appearance to make the perfect muffin.
