Red Dead Redemption 2 has various hidden weapons and attire scattered throughout the map. Both the Viking Helmet and the Viking Hatchet can be found close together buried in a viking tomb. This is a bit off the beaten path, so it is not likely that you will happen upon it unless you are looking for it.
Finding The Viking Tomb
The Viking Tomb is located in Annesburg north of Beaver Hollow and south west to Roanoke Valley. Beaver Hollow will not show up on the map until you have entered that area. Once there go north east, crossing the river. When you approach Roanoke Valley you will find a cavern under a hill. Go behind this cavern and up the hill.
When you are close to this area you will receive an indication that you can inspect the area. You will write it in your folder and a symbol will appear on the map. Near this area you will see some stone foundation structures.
Entering The Viking Tombs
As you approach the stone structure you will find one that is larger, with a stone table in the center with a skeleton on it. Drop down into this area.
Once in this area go between the table and the two tunnel entrances. Go into the 2nd tunnel entrance.
Finding the Viking Helment
Walk down the second tunnel and look to the right. There is a shelf with several skulls on it. The Viking Helmet is on that stone shelf. When you approach it there will be an indication that you can pick it up. If you already have a hat on, it will fall on the ground when you pick up this helmet. When I did this I was wearing the Mining Light Helmet, it fell on the ground and was no longer accessible from my horse. If you want to keep your current hat, switch it out with a hat on your horse before picking up the Viking Helmet.
Finding The Viking Hatchet
The Viking Helmet was next to the stone table with the Skeleton on it. Go back the way you came and approach the table. It is on the opposite side of the table, buried in a skull. When you approach it there will be an indication that you can pick it up.
The Viking Helmet
There is no indication that the Helmet protects you from damage, but it does look cool. It doesn't fall off your head as easily as your normal hats.
The Viking Hatchet
The Viking Hatchet can be held and used as a melee weapon, or thrown. This has low range and medium power, but can be effective when used with deadeye.
