3 Ways to Use Stale Baked Goods

Living in a dry climate, baked goods dry out very rapidly so I've developed some different ways to use them rather than having to toss them in the trash. These three methods will have your family or guests clamouring for more and wanting your recipes. You may share or keep it your secret.

Apple Donut Bread Pudding Recipe

Stale donuts or sweet rolls make awesome bread pudding by using a few modifications.

We both love bread pudding in almost any form but I’ve found it is a great way to use up stale donuts and sweet rolls. Since the ‘bread’ is already sweet, I only use enough sugar to sweeten the raw apples.

9 by 12 baking dish with at least 1 1/2 inch sides.

3 – 4 small Granny Smith apples (cored and sliced thin – peeling is optional)

1/4 cup sugar - sprinkled over the apples (or to taste)

1/2 teaspoon Apple Pie Spice – sprinkled over the apples.

Put above mixture into your microwave and cook about 6 minutes on high – stirring half-way through. Apples should be starting to look a little clear in places. (If you don’t have a microwave or want to make a pan full too large for the microwave – cover the apple mixture with foil and bake for about 20 minutes before adding the following).

Now crumble, tear or cut up 3 to 4 donuts and/or sweet rolls over the apple mixture.

Mix the following together and pour over the apple donut mixture.

3 eggs – beaten

2 cups milk – scalded

1 teaspoon vanilla

1/4 cup butter or margarine

1 teaspoon cinnamon

1/2 teaspoon nutmeg

Place on middle rack in over and bake for 40 minutes at 350 degrees. Check at 35 minutes as you don’t want to overcook and have it dry out. Knife inserted 1 inch from the edge should come out clean and the apples should be fairly tender.

Serve warm or cold.

Makes about 12 servings

This is a very ‘forgiving’ recipe in that you can increase the apples, use peaches, apricots or any other kind of fruit on the bottom. If you want to make a larger pan full, simply increase the milk and egg mixture so that you have enough to soak up the ‘bread’.

Glam Layered Dessert

Use a large glass bowl (the straighter the sides the better this dessert will look).

2 Cups stale baked goods - Tear up your stale cake, donuts, sweet rolls or whatever baked goods you are using and place in the bottom of the bowl.

1 Cup Sauce or cool gelatin mixture - Make a lemon sauce (or whatever sauce or liquor flavor you want) and pour over the baked goods to moisten. Cool gelatin will also make a pretty desert if you use it in this step.

1 – 2 cups fresh fruit – cleaned and dried – sliced if necessary - Put a layer or two of fresh fruit (blueberries, strawberries, kiwi, peaches or whatever you want) on top of the baked goods and sauce layers.

2 cups vanilla pudding – cooled. Cover the fruit with a layer of cold pudding.

Whipped Topping - Top all with whipped cream or a whipped topping and garnish with fruit, nuts or coconut.

Chill until time to serve. Refrigerate leftovers (if there are any!!!)

1 1/2 Cups cookie crumbs

1/3 Cup butter or margarine (melted)

Mix two together and press into 9 inch pie pan. Bake at 350 degrees for 10 minutes. Cool before using with chiffon pie.

The harder cookies that crumb are best but if you are using soft cookies, dry them in a low heat over before creating the crumbs.

Use a food processor or put the cookies in a paper or plastic bag, crumble into the bag and then continue crushing with your rolling pin or use a can. Just be careful not to push so hard that the bag breaks.
