If your looking for a Vegetarian cookbook that helps you plan a healthy meal, than look no further. I've got a cookbook for you. It's called the Sabbath Dinner Cookbook 2 by The Adventist Kitchen. This cookbook is set up with several small menu's which is nice. A menu consists of a main dish, salad or vegetable, rolls, a dessert and a beverage. This helps a lot especially when you don't know what to make. Whats really nice is that you can mix and match the different dishes from each of the menus to make one that works for you. So you might not have all the ingredients for one recipe but you do for another one. Maybe you, a family member or friend doesn't like a certain dish. It's nice to have options to look at to help you plan the perfect meal. Another nice feature is that each recipe gives the per serving of calories, total fat, cholesterol, sodium, carbohydrates and protein.
Not only are the menus great but I like that the recipes include the Worthington vegge meat that I like. I think its a well planned out cookbook with so many helpful recipes that are so good. I've made many of the recipes from this book and I've mixed and matched them into great meals. When I was first introduced to this cookbook was the year when I won it for being newly married in the month of June at the Seventh Day Adventist campmeeting I attended through my church. Not often did I ever win anything but this cookbook soon became a favorite along with three other cookbooks that I had found out that went in the Adventist Kitchen series.
With the holidays not far away there is a menu I especially like. It consists of a Holiday roast, broiled apple rings, sauteed potatoes with rosemary, fresh steamed broccoli, whole wheat rolls, tropical punch and hot fudge sauce over vanilla frozen yogurt. Doesn't that meal sound so mouth watering! Just so you can see what one of the recipes is like I'll share the Holiday Roast one. It's really simple to make. You can make it up even the day before and then reheat it the next day for serving.
- 1/2 cup margarine
- 2 medium onions chopped fine
- 2 cloves garlic minced and pressed
- 1 cup fresh mushrooms finely chopped
- 1 20 oz can + 1 cup Loma Linda Vege-Burger
- 2 packets brown beeflike seasoning and broth mix
- 1/4 cup hot water
- 1 cup pecans finely chopped
- 3 egg beaten or 3/4 cup Morningstar Farms Scramblers
- 1/2 cup breading meal
- 1/2 cup bread crumbs
- 1/2 tsp salt
- 2 tsp poultry seasoning
- 3 bay leaves
- Heat oven to 350.
- In large skillet saute onions, garlic and mushrooms in margarine. Add VegeBurger; brown slightly. Dissolve beeflike seasoning in hot water. The add all other ingredients in a large bowl. Spray a 9 x 5 x 2 3/4 loaf pan with cooking spray. Line it with aluminum foil, leaving enough foil to fold over roast. Spray foil with cooking sprays as well. Put roast mixture into pan. Place the three bay leaves on top. Fold the foil over top. Bake 75 minutes or until set. Refrigerate.
- Reheat at 300 for 20 minutes.
- To serve: remove bay leaves. Carefully remove roast from pan onto a platter. Surround and garnish with Boiled Apple Rings and fresh parsley.
