This Quick and Easy Fruit Cake Recipe is perfect if you are looking for a recipe that turns out just right each time, with little fuss.
I use this recipe whenever I need to make a Quick and Easy Fruit Cake for an occasion cake such as Christmas Cakes or Wedding Cakes.
I love cake decorating, but I don't really enjoy baking, so I use this Quick and Easy Fruit Cake Recipe because it turns out great each time!

- Vegetable Oil
- 325 g (12oz) Plain Flour
- 1 teaspoon Ground Cinnamon
- Half teaspoon Ground Nutmeg
- 250 g (9oz) Butter
- 250 g (9oz) Soft Brown Sugar
- 4 Eggs (beaten)
- 1 kilo Luxury Dried Fruit
- 2 teaspoons Grated Orange Rind
- 2 tablespoons Orange Juice
- Preheat the oven to Gas 1
- Line an 8" round tin with oil and grease-proof paper
- Mix flour, cinnamon and nutmeg together
- Cream butter and sugar together
- Beat eggs and flour alternatively into the butter and sugar mixture
- Stir in the fruit, orange juice and rind
- Spoon mixture into the prepared tin and smooth level with a spatula
- Cook in the centre of the oven for about 3 hours
Step 1: Prepare the Cake Tin
Oil and Greaseproof Paper
To line a cake tin, I use grease-proof paper but baking paper is fine too.
First rub the vegetable oil all around the inside of the tin, making sure that you get right into the joints.
Next, place your tin on top of the greaseproof paper and draw around it.
Cut the circle slightly smaller than the one you've drawn out. This will line the bottom of the tin.
Now cut two long strips to use for lining the walls of the tins.
Place the greaseproof paper into position inside the tin. The vegetable oil will help the paper stick to the tin.
Voila! One lined cake tin, ready to cook your Quick and Easy Fruit Cake!

Step 2: Mix Flour and Spices
Sift 325g (12oz) of Plain Flour into a large mixing bowl.
Sift it well to get plenty of air through the flour
Add 1 teaspoon of Ground Cinnamon and half a teaspoon of Ground Nutmeg to the flour.
Mix the flour and spices together well!

Step 3: Cream Butter and Sugar Together
In a separate mixing bowl, cream together 250g (9oz) of butter and 250g of soft brown sugar
Tip: warm the butter slightly to make it easier to cream
Start by chopping the ingredients together with a knife, then progress to using a fork, and finally, use an electric mixer to cream the two together until they are really nice and smooth.
Step 4: Beat Eggs
Break 4 eggs, one at a time, into a mug.
Beat them with a fork or electric mixer until they are mixed together well
Step 5: Add Eggs and Flour to Mixture
Slowly add some of the egg mixture to the butter and sugar creamed mixture.
Stir in well
Next add some of the flour and spices to the mixture, stir in well, making sure that the butter and sugar from the bottom of the bowl is brought into the mixture.
Continue to alternately add the eggs, then flour into the mixture until it is all combined.
Use an electric mixer to blend well
Step 6: Stir in Fruit, Orange Juice and Rind
Now being to add the kilo of fruit, grated orange rind and orange juice to the mixture.
Add a bit of fruit at a time
Use a spatula or wooden spoon to mix gently. This will make sure that the fruit is not chopped up.
Do not use the electric mixture at this stage
Mix until all of the fruit is covered in cake mix
Step 7: Spoon into Tin and Cook
Spoon the mixture into the ready prepared cake tin
Use a spatula to level the mixture inside the tin
Smooth the top of the mixture slightly, so that the cake bakes evenly
Bake in the center of the pre-heated (Gas mark 1) oven for about 3 hours, until the top of the cake bounces back when pressed.
Leave to cool before removing from tin!
