The New Bisquick Easy Baking Mix

Quick Baking with Bisquick Gluten Free Recipes . I have recently learned that our oldest daughter has been diagnosed celiac disease and have been looking for food to make for her. She and her family will be coming to spend the summer with us up at the cottage this summer and will need to have some gluten free foods to eat. In my search for some easy camp cooking I discovered the New Bisquick baking mix at Amazon. I was delighted to see that like the original baking mix there are some recipes on the box.

There are the traditional pancake, waffle and biscuit recipes, as well as strawberry shortcake. They are all on the box and easy to make food. Written on the side of the box there is a recipe for pizza, chicken fingers and oven baked chicken. I have a few recipes to start with and I will show you some of our traditional summer camp foods too. You can even use your old Bisquick recipes.

The recipe we enjoy here is fried fish and do I have a recipe for you! I have another one for chocolate cake. Since we do most of our cooking outside when it hot either on the grill, electric frying pan, breadmaker and crockpot, this year we added a large toaster convection oven for baking. We have a very large screen tent we use as our dining hall with a table set-up just for outdoor cooking. Our cousins who have the camp next door to us gave us a large picnic table which seat a large crowd. Each year we try to add a few more luxuries to make the summer fun without a lot of unnecessary work. We share cooking responsibilities and clean up detail. Since we are in such a remote location we also take turns delivering garbage to the dump and doing our part to recycle, reduce, reuse, and compost anything we can.

Bisquick Baking Mix and Baking Tips


Chocolate Cake

2c. Gluten Free Bisquick

2 eggs

1/2 c sugar

1/4 c. unsweetened cocoa powder

1c. milk

1 T veg. oil

Mix all ingredients by hand or with an electric mixer until all dry ingredients are moistened and smooth. Pour into a greased cake pan. Bake at 375 degrees F for 30 to 36 minutes. The cake should be bouncy when touched in the middle and be pulled slightly away from the baking pan. Front with your favorite frosting or sprinkle confectioner sugar lightly over the top of the cake through a sifter or mesh strainer.

Gluten Free Fish Fry Coating

1 cup Gluten Free Bisquick

teaspoon sugar

teaspoon cayenne powder

teaspoon GF garlic powder

teaspoon GF onion powder

teaspoon salt

Heat peanut or coconut oil in a skillet or deep fryer on high. Pour a portion of the powdered mix in a plastic bag with one piece of fish at a time shake until coated. Carefully drop into heated oil and cook until golden brown and crispy. Do not overfill the pan or deep fryer, place each piece of cooked fish on to a plate covered with white paper towel and cover with another plate place upside down to keep it warm until all of the fish is cooked.

Make Your Own Baking Mix

Make It Yourself Baking Mix

5 cups rice flour (white, brown, or a mixture of both)

2 1/3 cups potato starch

6 teaspoons baking powder

5 teaspoons salt

4 tablespoons sugar

1 cup dry buttermilk (powder)

6 tablespoons egg substitute

1 3/4 cup shortening

Mix all ingredient in a large bowl and cut in the shortening with a pastry blender or potato masher. When all of the shortening is cut into the mix it will look powdery with no lumps. Store you baking mix in a large glass jar or other airtight container. Follow any of the gluten free baking mix recipes, it works just like Bisquick.

The possibilities are endless with this mix you can use any of the Bisquick recipes. You may want to purchase a Bisquick Cookbook and explore the large variety of recipes available.

Boy, I didn't know there was gluten free Bisquick. Now I'll have to look for it at the stores. I already buy Crunchmaster crackers (so good!) and Pamela's is my favorite for stuff like flour, pancake mix, and pizza dough mix.

My oldest daughter seems to be gluten intolerant too. I've just bought several gluten free flours and recently got the gluten free bisquick, but I haven't used it yet. I wish it came in a bigger box!
