Introducing a Great Pumpkin Bread Recipe

This page contains three pumpkin bread recipes. Two are for yeast bread that is cooked in a bread machine. The third is for a chemically leavened quick bread baked in the oven.

Instructions are included for cooking a fresh pumpkin, if desired. Alternatively, you can use canned pumpkin for these recipes.

Often, in North America, a good pumpkin bread recipe is baked and served in the fall or autumn. Pumpkin is such a great food to serve for Thanksgiving, for Halloween and of course, at any time at all during this season.

You have to wonder, though, why we limit this wonderful bread to one season of the year. Pumpkin is available year round, and its so healthy and good for us. Not to mention, it tastes great in breads, pies, muffins and most any other baked goods.

Pumpkin Bread Recipe For the Bread Machine

Double Pumpkin!

Ingredients

2 1/4 Tsp Active Dry Yeast

1 2/3 Cup Bread Flour

1 1/2 Cup Whole-wheat Flour

3 Tbsp Powdered Milk

3 Tbsp Brown Sugar

1 1/2 Tsp Ground Ginger

1 1/2 Tsp Grated Nutmeg

1 1/2 Tsp Ground Cinnamon

1 1/2 Tsp Salt

1 1/2 tbsp Vegetable Oil

3/4 Cup Pumpkin, canned or cooked and pureed

3/4 Cup Water plus 3 Tbsp

3/4 Cup Roasted Pumpkin Seeds

Preparation

Consult your bread machine manual and add all ingredients in the order they recommend. Do not add the pumpkin seeds just yet. Process using the basic bread cycle.

Add the pumpkin seeds at the beeper or at the end of the first kneading cycle.

When finished baking, this pumpkin bread is wonderful when served spread with cream cheese or plain butter.

Note: the quantity of ginger given could be too much for some tastes. Adjust accordingly.

Additional Recipes for Pumpkin Bread

Recipe for Pumpkin Pecan Spice Bread

This is another recipe for pumpkin bread that is made in the bread machine.

Ingredients

3 cups bread flour

1/2 cups whole wheat flour

1 1/2 tbsp softened butter

1 tsp salt

1 tsp pumpkin pie spice

1 large egg

1/2 cup milk

1/4 cup orange juice

1/2 cup canned pumpkin or cooked pumpkin, pureed

1/3 cup sugar

1/2 cup pecan pieces

2 1/2 tsp active dry yeast

Preparation

Use the basic bread settings on your bread machine. Process according to manufacturer's instructions.

When done, remove your bread to a rack to cool.

This recipe for pumpkin bread makes one 1 1/2 pound loaf.

Recipe for Pumpkin Mincemeat Bread

This loaf is great for the Christmas and Holiday Season.

This recipe calls for sourdough starter. You will find a recipe for starter at this link.

Ingredients

4 cups all-purpose flour

1 tsp baking powder

1 1/2 tsp baking soda

1 1/2 tsp salt

2 tbsp pumpkin pie spice

1 1/2 cups granulated sugar

1 1/2 cups packed brown sugar

4 eggs

1/2 cups sourdough starter

2/3 cups water

1 cup vegetable oil

2 cups canned pumpkin

1 1/2 cups prepared mincemeat

1 cups chopped walnuts or pecans

Preparation

Grease three 9 x 5 or five 7-1/2 x 4 loaf pans and set them aside.

Preheat your oven to 350 degrees F.

Using a large mixing bowl, combine dry ingredients, spice and sugars.

Using another bowl, beat the eggs, then stir in the oil, water, sourdough starter and pumpkin.

Dump this into the flour mixture and stir to moisten.

Add mincemeat and nuts. Stir.

Put the mixture in your loaf pans and bake for one hour or until done.

This pumpkin loaf freezes well.

Festively wrapped, it makes makes a great edible food gift for your holiday gift-giving.

How to Cook a Pumpkin

If fresh pumpkins are available, you may want to cook your own and puree it.

To cook a pumpkin, first wash the pumpkin and then cut it in half and scrape out the seeds and the stringy pulp.

Lightly brush the inside of the pumpkin with cooking oil.

Preheat your oven to approximately 350 degrees Fahrenheit.

Place the pumpkin skin-side up on a cookie sheet. Put it in the oven and cook until soft when pricked with a fork.

Cooking times will vary, so start checking after about twenty minutes.

Allow the cooked pumpkin to cool, then remove the skin. Use a blender to puree the pumpkin.


To Cook the Pumpkin Seeds

Remove the stringy pulp that sticks to the seeds. Place them in a pot of boiling water and simmer for ten minutes.

Remove the seeds from the heat; drain and place seeds over a lightly oiled baking sheet. Sprinkle generously with paprika and place in preheated, 325 degree oven (Fahrenheit). Bake until brown. Watch so you do not burn the seeds or dry them out too much.

Sprinkle your seeds over a salad or eat out of hand.

Great recipes! Looked at your links. Word of caution to newbies with sourdough starter: you see a recipe that uses commercial yeast, it is NOT sourdough anymore, it is now a contemporary bread. Stay away from any recipe claiming to be sourdough but contains commercial yeast. Keep it pure. ;-)
