Peanut Butter Espresso Cookie Bites

June 12 is National Peanut Butter Cookie day. To celebrate, I wanted to do something a little different this year. Nestle's Espresso Chocolate Morsels are one of my favorite ingredients. Chocolate and coffee? Now that's a perfect duo! What could possibly make it better? You guessed it, peanut butter.

These peanut butter espresso chip cookie bites pack a lot of flavor and a surprising ingredient, cinnamon applesauce. I know it sounds weird, but it keeps the cookies soft and is perfect to add in when you don't have eggs on hand. Everything blends beautifully together and the end result is delicious! These cookie bites are addicting! You've been warned.

  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1/4 cup applesauce, I used cinnamon, but you can use original if you'd like.
  • 1 1/2 cups flour
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 1 bag espresso chips


  1. Pre-heat oven to 350 degrees.
  2. Thoroughly cream sugars, vanilla, and applesauce in a mixing bowl.
  3. Stir in peanut butter.
  4. In a separate bowl, combine flour, baking soda, and salt. Mix well using a fork.
  5. Slowly add dry ingredients to the creamed mixture.
  6. Stir in espresso chips. The dough will be crumbly.
  7. Form dough into small balls and flatten into a cookie shape. Place on a greased cookie sheet and bake 7-8 minutes.
  8. Place cookie bites on a cooling rack. Allow to cool completely before enjoying.

Chocolate chip cookies are certainly delicious... but you know what's better Bill? Espresso chips. :)

Hi Alyssa. I never had a peanut butter espresso chip cookie before. I can't wait to make these. They look and sound delicious. I'll be having them for breakfast tomorrow. Haha.

I'm weird about peanut butter. I readily admit it. I love it and have it for a snack each and every night, but peanut butter cookies always seem dry to me and I rarely eat them. Like I said, weird! I'm sure yours are great, but I'm a chocolate chip cookie guy down to my marrow. :)
