Apricot Slice - No Bake

This is a delicious tasting Apricot Slice especially for folks with a sweet tooth, with absolutely no cooking involved. Included in the recipe are Marshmallows, Walnuts, Coconut and Sweetened Condensed Milk !

Ingredients


1 x cup chopped dried apricots , make the dices fairly small.
1 x cup chopped marshmallows, make the dices fairly small.
1 x cup chopped walnuts. once again make the dices fairly small.
1 x tin sweetened Condensed milk.
1 x packet of "NICE" biscuits.
Coconut as much as required.

I have not tried this recipe with fresh apricots but maybe that is an option!

Method

This is the method I use to make the Apricot Slice:


Crumb biscuits until fine, with no lumps at all. (you may like to use a Magic Bullet for this)
Add sweetened condensed milk, apricots, marshmellows and walnuts,
stir until all well combined.
Spread coconut on to baking paper.
Divide mixture into four lots.
Place 1 lot at a time into coconut,  shape into oblongs approximately 9 inches (23cm) x 3 inches (8cm) and coat all over with coconut.

Line an airtight container with baking paper and place finished logs on paper covering each layer as you go, so that they do not touch.
Place in fridge, may take four to six hours to set,
It is best to keep this log in the fridge, otherwise it will go soft and will not be as tasty.
just slice as much as you require at any given time.

I am not sure how long it keeps for, as in our home, it is gone within a week.

It is fiddly and gooey to work with, but well worth it.

Variations

If you prefer one ingredient more than another just use less of one and more of the other.
Also if you prefer a little less sweet.

For instance: "MARIE" biscuits could be used in place of "NICE" biscuits!


In the fridge!

It is nice to have this slice in your fridge in case friends drop in for coffee or a cup of tea.

Warning

In Australia, we have been advised not to allow children under the age of FIVE years to consume nuts of any description.
 Maybe you could substitute the nuts for something else for your children!

I'm not sure about freezing them,have never tried it,but I will.

One thing that concerns me would be that the crumbed biscuits may go soggy when thawing out. On the other hand, it has to be kept in the fridge otherwise the whole thing go soft, and does not taste as nice. It may be worth trying one log, it makes four.

We love it, one slice is never enough.

I'm afraid I could not live without my Oven, we are joined at the hip

I can't see why you could not use Dried Mango, the texture would be a little different and it may be a little sweeter,apart from that there is no reason not to try it.

Its a good thing to change Recipes a little to accommodate your own personal taste. Would love to know what you think if you do make it with Mango.

VacationAustralia. Hi. This Apricot Slice has a flavor all of its own, it is also easy to cut into bite size pieces, and would not take up a lot of space in a picnic hamper, when you go on your trip to the coast. That sounds like fun.

As it is a no cook Recipe you two could make it with ease.

oliversmum, your apricot slice looks absolutely delicious. It would be ideal to cut up and put in a picnic hamper to travel to some lovely spot on our beautiful coast line.

It is fortunate that it is a no-cook recipe because we are both not good cooks but I think we could handle your recipe for no cook apricot slice ok.

btw. you are safe on this Apricot Slice recipe, it is 'no cook' so you should be able to make it without burning, but on the other hand :-)

Candie V. Hi. These Biscuits are spelt "Nice", but in some places pronounced "Niece" and are made by Arnotts. I have now put a photo above in the hub.

The "Nice" biscuits have a sprinkle of sugar on the top, which makes them a little sweeter than the other "Marie" Biscuits, both types of biscuits are made by the same company.
