Luscious and Low-Carb: Meatloaf

killermeatloaf

Meatloaf with Bacon: Low-Carb and Gluten-Free!

This meatloaf does triple duty: it is low-carb for Atkins eaters, it is gluten-free for celiac sufferers, and it is utterly, sinfully delicious for everyone. My kids beg me to make this meatloaf with bacon. Yes, there's a filler that helps it hold together, just as there is for every meatloaf. Read on to discover the secret ingredients for filling and flavor!

Follow the step-by-step photos with instructions, or go straight to the printable recipe card for gluten-free, low-carb meatloaf with bacon at the bottom of the page.

Gluten-Free, Low-Carb Meatloaf with Bacon Ingredients - Assemble all ingredients beforehand.

killermeatloaf

2 lb ground beef

8-oz can tomato sauce

3 or 4 tbsp tamari sauce (soy is fine, if you are not avoiding gluten)

1 tbsp onion powder

1 tbsp dried parsley

salt & pepper to taste

3 or 4 cloves garlic, minced very fine

2 eggs, slightly beaten

1/2 to 3/4 cup Parmesan, Romano, or other shaker-style cheese (or combine!)

1 slice uncooked bacon, finely chopped

Yes, Parmesan or Romano cheese replaces the usual breadcrumbs or crackers in this meatloaf!

It is delicious and brings meatloaf back to the table for low-carbers & those who can't eat gluten.

Parmesan, Romano, & Asiago Cheese, Shaker-Style - Grated cheese is the filler that adds flavor to the gluten-free, low-carb meatloaf with bacon!

Much Lower Carbs, but Not Carb-Free Meatloaf

Yes, there is some tomato sauce in this recipe, but the carbs are still drastically reduced. The ketchup in the recipe is replaced with no-sugar tomato sauce; the ketchup or gravy on top is replaced with cheese; and the breadcrumbs are eliminated completely for a significant reduction in carb count.

What is the carb count per serving?! My meatloaf is in the oven now!!!

anonymous on June 09, 2013:

Still waiting for mine to finish cooking. Looks great so far. Does anyone heard what the carb count is?

MelanieMurphyMyer on April 20, 2013:

Great recipe. I made this a few weeks ago and returned today because I want to make it again this weekend for my son home from college. :)

anonymous on October 26, 2012:

I substituted chopped tomatoes for the sauce because it was what I had on the shelf. My husband loved it and so did I. We'll be making it again.

Vicki Green from Wandering the Pacific Northwest USA on August 28, 2012:

Great idea - I need to limit my carbs so can hardly wait to try this recipe.

My "old" meatloaf was my husbands favorite thing I made...tonight he told me how much he liked this at least 5 times during dinner! Changing our diet to low carb has been a complete recipe book rewrite, this will DEFINITELY be included!! Btw, I didn't have bacon but used 1lb ground beef and 1lb ground sausage...delicious!!

How much salt do you put in? A starting point would be nice and then I can tweak it from there.

As an ex chef and lifelong cook, I was challenged last year when we suspected my wife Polly was celiac. It was initially overwhelming to think of cooking without staples that I had taken for granted for years. I read more labels during those six months than I had up to that time.

Kudos to you for putting up gluten free recipes, and some great resources for adapting to a gluten free diet.

I am sure I'll be trying this really soon - I've come to realize I need to go back to a lower carb way of eating, and this sounds like something even my husband would eat and enjoy. tandemonimom lm (author) on August 12, 2010:

@anonymous: I don't taste it either; I know how much salt and pepper my family like in a dish. "S&P to taste" just means "use as much or as little as you enjoy." However, there is little danger in tasting a bit of raw beef that is right out of the fridge; it is meat that has been left to stand at room temperature for a while that begins to develop dangerous bacteria.

anonymous on August 12, 2010:

I really like this recipe EXCEPT I'm not going to taste the raw meatloaf mixture to see if it needs more salt or pepper. Wish recipes would give an amount. This recipe contains raw ground beef!! please don't taste for salt!
