Melt In Your Mouth Instant Pot Chuck Roast Recipe
The weather is crisp and gray here in Ohio. We've had a few rare moments of golden sunshine, where the leaves seem to glow as they dance in the breeze. Glimpses of crimson, orange, and yellow appear and slowly float to rest on the grass, still wet from recent rains. Autumn has officially arrived.
While it may be the season of apples and pumpkins, the chill in the air is more reminiscent of a wintery day in February. This is the time for hot, savory, filling dishes.
With audaciously high grocery prices, I've skipped over the chuck roasts in favor of pork. In fact, it's been about two years since I've cooked a chuck roast for my family. Pork is the best value, as I can purchase a loin roast and cut it up to make multiple meals throughout the week.
Recently, however, my family visited our local farmer's market. This is a trip we try to make every few months. I love to stock up on baking ingredients and homemade treats. For this trip, we were specifically looking for pumpkins.
On our way back home, we made a spontaneous stop at another local shop. We had heard good things about it, but never had the time to check it out. It was a cute little store, extremely similar to our favorite farmer's market, and they even had a little dine-in area where you could enjoy a snack and beverage. It was at this store that we found a great deal on a chuck roast. While it was still pricey, the cut and quality of the meat was worth it. Excited for this treat, we headed home for a delicious dinner.
Normally, I'd toss everything in my crock pot and let it cook all day. But, no one wanted to wait until late in the evening or the next morning to enjoy the roast. Once again, the instant pot saved the day.
I've come to appreciate this little appliance in the years since we received it. While it is not instant by any means, it does help speed up the cooking process.
Normally, it would take all day to make this roast in the crock pot. I'd have to start first thing in the morning for it to be ready to eat by dinner time. Using the instant pot, it took about two hours total, from preparing the ingredients to serving it for dinner.

If you're ready to make a delicious roast in a matter of a few hours, gather your ingredients and follow along with the recipe below. Pair with my cast iron honey biscuits for a special treat. You and your family will be happy you did!
Ingredients
- 2.5 - 3 lbs. chuck beef roast
- 3 tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 onion
- 5 cups water
- 10 carrots
- 10 potatoes
- 5 green peppers, optional
Instructions
- Peel and slice your onion in half. Set one half aside. Slice the other half into chunks.
- Plug in your instant pot and add 2 tablespoons of oil into the pot. Press the saute button.
- Mix 1 tablespoon of oil with the salt and pepper. Use this to season the meat, coating it well.
- Place your beef into the pot with the chopped onion. Sear each side of the beef.
- While your beef is sautéing, wash and chop your potatoes. Peel and slice the carrots, and chop up the other half of your onion.
- Once the meat is browned, transfer it to a large plate or baking sheet. Turn off the instant pot.
- Scrape up the onions and any brown bits in the bottom of the pot. Pour in 1 cup of water to help.
- Pour the liquid out of the pot. Separate the oil as best as you can. I just poured the liquid into my same measuring cup, allowed it to settle, and strained out the oil.
- Place the meat and chopped vegetables back into the pot. Pour the remaining water and sautéed onion back in. Pour an additional 4 cups of water into the instant pot.
- Place the lid onto your instant pot. Be sure the steam release handle is set to seal.
- Cook on high pressure for 60 minutes. Allow the pot to naturally release the steam for 15 minutes. Check the float valve. If needed, carefully turn the steam release handle to allow any extra steam and pressure to release. Then, remove the lid.
- If you opted for green peppers, wash and slice them now.
- Serve generous portions of chuck pot roast with fresh green peppers on top, if desired. This dish would pair well with my cast iron honey biscuits. Enjoy!
