Delicious haupia - Hawaiian Coconut Pudding

When I was a child, I could not understand why people liked to eat coconuts. Coconut flakes were dry and had a chalky taste to me. I would endlessly chew the coconut flakes until my my mouth became numb with effort. In the end I would just give up and spit the flakes out. One day when I went to a local Hawaiian restaurant, I got to sample a Hawaiian dessert called Haupia.

It was this small square of deliciousness that was made with coconut milk. I couldn't believe how yummy it tasted. Ever since, I started to try everything with coconut in it. Coconut cake, coconut ice cream, coconut candy. In the end, I became such a fan of coconut, I even started using coconut oil on my skin and hair.

Haupia is a traditional Hawaiian dessert made with coconut milk that's popular in Hawaii. Although it's sometimes called haupia pudding, it's consistency is more like gelatin and usually served cut into squares. Haupia flavored desserts can be found all over Hawaii and even McDonald's sell Haupia Pies similar to their apple pies. In grocery stores throughout the islands, you can find yummy things such as haupia pies and haupia cakes. Ted's Bakery in Hawaii makes some of the best island-style pies including haupia.

I tried to create a haupia dessert that was easy to make and low in carbs. I used minimal ingredients and came up with a sweet dessert that turned out quite tasty.

Coconut milk is good for you

Many people argue over the health benefits of coconut milk like they do with so many other food products. However many countries around the world have been eating the coconut for centuries for its health benefits. Not only is the coconut a naturally healthy food, it also tastes good.

Modern research points to the fact that we need good fats to keep our bodies healthy. Coconut milk contains lauric acid, antimicrobial lipids and capric acid, which have antibacterial, antifungal and antiviral properties. The body uses lauric acid and converts it into monolaurin, which is believed to fight viruses and bacteria that cause herpes and influenza. It is also packed with vitamins C, E, B1, B3, B5, and B6 as well as iron, selenium, sodium, calcium, magnesium and phosphorus.

Recent research has shown that those who primarily use coconut oils rather than animal or vegetable fats have a lower incidence of heart disease. In the Philippines, coconut oil is used to moisturize hair and skin and to treat skin infections and wounds due to its anti-bacterial properties.

Low-carb haupia square recipe

Ingredients

1 13.5 oz can coconut milk

1 cup heavy cream

18-20 packets of artificial sweetener such as splenda or 3/4 granulated sweetener ( use more or less depending on your taste )

1/2 cup water

3 envelopes unflavored gelatin

1/2 cup shredded coconuts unsweetened( optional )

Directions

In a saucepan, mix together the coconut milk and sweetener over low heat. Dissolve the gelatin in water for one minute. Stir the gelatin mixture into the sweetened coconut milk. Add the heavy cream and mix well.

Pour the coconut mixture into an 8-inch square pan. Sprinkle the flaked coconuts on top if you like. Cool to room temperature and cover with plastic wrap. Refrigerate until firm. Cut into squares and serve.

Sounds good, I cannot use the sugar substitutes, so I use Stevia or real sugar. I wonder if it would taste good with stevia. I only got one wrong on the quiz, the fiber!

Funny, but I love coconut flakes. If I have to choose between the coco juice and the flakes, I take the flakes. I can eat it raw, or sometimes cook it with sugar or what we call bucayo or coconut sweet.
