A bowl full of green tomatoes!
What can one do with a huge bowl of green tomatoes?
What if....Your kids get over-zealous and pick all your lovely green tomatoes before they ripen.
A summer thunderstorm knocks your loaded tomato plant over before the 'maters turn red.
The weather turns chilly and you still have tons of beautiful green tomatoes on the vine!
No problem. Here are a few recipes using green tomatoes that will save the day (or your harvest)! Recipes are vegetarian except for egg and dairy products.
The recipes you will find here are: Green Tomato Pasta sauce, Green tomato casserole (my favorite ) Green Mary cocktail and Fried Green Tomatoes (from Fanny Flagg).
FYI: the second scenario above was the reason I had so many! The green tomatoes shown in the image above are "Brandywine". They are quite a meaty, heavy tomato.

Such a beautiful Green!
Green Tomato Pasta Sauce
You can freeze this gluten free tomato sauce!
If you have:
3 tablespoons good quality olive oil
3 medium cloves of garlic - chopped
3 medium (bigger than a tennis ball, smaller than a soft ball) green tomatoes, cut into eighths
1/2 cup H20
1/2 teaspoon dried basil ( 1 T fresh, chopped)
1/2 cup Parmesan cheese, shredded
salt and pepper to taste
Heat oil in a large pot (Dutch oven or big saucepan) over medium low heat.
Add garlic and cook about 1 minute.
Add tomatoes and increase heat to medium.
Sauté, stirring until garlic begins to turn brown (about 4 minutes).
Add water and dried basil (wait to add the fresh basil), cook covered 5 to 8 minutes.
Check occasionally to see when tomatoes are soft and liquid is thick (like syrup).
Transfer contents to a food processor or blender and add cheese..
Transfer to a saucepan and season to taste.
Reheat and serve over hot pasta of choice.
Use fresh, chopped basil as a garnish.
Serve with grated Parmesan.
(Sauce can be frozen)

Easily chop the garlic for the green tomato pasta sauce: - A "must have" kitchen tool.
I have a chopper very similar to this one and use it for garlic. I bought mine at Williams Sonoma for about the same price. This tool is optional, but I consider a garlic chopper a "must have" tool in my kitchen.
Cracker Crumb topping is a little too brown, but the green tomato casserole is devine!
Green Tomato Casserole
My personal favorite recipe for using those green tomatoes!
If you have:
5 to 6 green tomatoes (thinly sliced)
Salt and pepper (to taste)
1 cup (4 oz) shredded Cheddar cheese
1/2 cup (1 stick) unsalted butter
Saltine cracker crumbs (use about 1 sleeve)
Optional toppings: Potato chips
Buttered 1 1/2 quart baking dish
You can make this recipe by:
Layering half the tomatoes, salt, pepper, half the cheese and one-third of the butter in the baking dish.
Repeat the layers and cover with cracker crumbs.
Dot with the remaining butter.
Cover the dish with a lid or aluminum foil.
Bake at 400 degrees for 40 to 45 minutes.
Yield: 4-6 servings

The Green Tomato Pasta Sauce was excellent! We added a bit more garlic the 2nd time, but it's versitle and good tasting. We even canned it after the blender step so that we have quick suppers by just opening the jar, adding the cheese & whatever else we have that evening and heating. Thanks much!

My plants got attacked by powdery mildew this season so I was left with about 20 lbs of green tomatoes. I made green tomato mincemeat and it came out great. Perfect for mincemeat pies and tarts (original recipes for mincemeat call for beef suet hence the "meat" in the name. I've substituted vegetable oil for the suet with no significant taste difference.) Thanks for the great recipes. I'll have to try some of those next season.
