Green Beans Straight From the Garden
Green beans or string beans (whichever way you would like to call these yummy vegetables) taste their best when they are garden fresh.
It was the year that my husband decided that we could have a large garden and sell our produce at the farmers market. His sister and her husband cleared off about an 80x30 foot area for us on their farm. The agreement was that we do all the upkeep. And they meant it.
The hot, humid, rainy season of summer 2010, was expected to break the record for rain during June, July, and August. The excess rain made some of the crops grow too rapidly.
Our vegetables were growing at many different times than we had anticipated. We didn't have enough variety of garden plants ready to set up at the Farmers Market, and the cost was around $60 for a setup table. To make a long story short, I could not see making any money at this.
In the meantime, about 80% of this garden was what we planted. The other 20% was my sister-in-law's plants thrown in. After all, this garden we planted on her farm. The labor of our work was hard to maintain for two people with this extensive garden.
We had picked several bags of green beans. That was only a small portion of the two large overcrowded, mosquito-infested rows of green beans that were ready to be gathered. Among other vegetables that we brought home were cauliflower, cabbage, broccoli, zucchini, peppers, and a few onions.

Green Bean Cutter and Slicer Machine
Norpro French Bean Slicer
I had added this French bean slicer to my wish list. I love French style beans. Not sure if they taste better, but in my mind, the sliced green beans do.
French-cut beans have a delicate taste and a pleasant, tender texture. Clamp this tool onto any surface up to 1- 1/4" thick, feed string beans into the hopper, turn the crank, and six revolving stainless steel blades quickly fillet beans into ideal 1/8" slivers. Hopper is 1- 1/4" wide and handles several beans at once. Faster than any other method. Metal gears, cast aluminum body. 3 1/4" x 3 1/2" x 4"; 1 lb. A heavy-duty tool meant to last a lifetime.
Use raw freshly cut green beans. Already cooked beans would make it too mushy. Push thru the slicer lengthwise. Send no more than one or two of the vegetables at a time through the machine. Otherwise, it may break the cutter.
Using a French green been slicer/cutter will make it more easy for the chef of the family.

When we grew our large garden, we knew that we needed a cultivator to loosen the soil and get it ready for the plants and seeds. Choosing a Craftsman brand cultivator/tiler was a no brainer. Craftsman brand has been part of our family for years. The reason for that is the difference between excellent quality versus inferior quality products. As fas are quality goes, in my opinion, the Craftsman brand is the best.
This tiler is easy to put together and set it up. The soil at the farm was hard, rocky and heavy. The tiler had no problem digging it up and turning the ground into a beautiful soft bed of dirt, ready for planting. Best of all, it made it so much smoother than raking and hoeing. Easy on our backs.

Green Bean and Tomatoes Postcard
Green Bean and Tomato Salad Recipe - Add Romaine Lettuce (Optional)
Enjoy this delicious recipe of green beans and tomatoes.
3/4 pound green beans, stems pinched off
1 teaspoon finely chopped chives
1/4 teaspoon finely chopped fresh thyme
1 tablespoon minced shallots
2 tablespoons lemon juice
2 tablespoons heavy cream
1/4 teaspoon salt
1/8 teaspoon ground pepper
1/3 cup olive oil
1 cup cherry tomatoes, each cut in half (or as much as desired)
1/2 cup hazelnuts, smashed and toasted
1 teaspoon honey
Directions for Dressing:
1. Whisk together the chives, thyme, shallots, lemon juice, heavy cream, salt, and pepper.
2. Whisk in the olive oil and honey with a fork, stirring until everything comes together. Set aside.
1. Bring two quarts of water to a boil. Salt generously and stir in the green beans. Cook for about 1 1/2 minutes. Just until the beans brighten up and soften a bit.
2. Quickly drain them and run under cold water to stop the cooking.
3. In a large bowl toss the green beans, hazelnuts, and dressing. Toss well. Add the tomatoes and toss very gently.

Green Bean and Potato Salad Picture
Green Bean and Potato Salad
1 1/2 pounds red potatoes
3/4 pound fresh green beans, trimmed and snapped
1/4 cup chopped fresh basil
1 small red onion, chopped
salt and pepper to taste
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1 clove garlic, minced
1 dash Worcestershire sauce
1/2 cup extra virgin olive oil
1. Place the potatoes in a large pot, and fill with about 1 inch of water. Bring to a boil, and cook for about 15 minutes, or until potatoes are tender.
2. Throw in the green beans to steam after the first 10 minutes. Drain, cool, and cut potatoes into quarters.
3. Transfer to a large bowl, and toss with fresh basil, red onion, salt and pepper. Set aside.
4. In a medium bowl, whisk together the balsamic vinegar, mustard, lemon juice, garlic, Worcestershire sauce and olive oil. Pour over the salad, and stir to coat. Add extra seasoning to taste.

But with my strange mind, I pictured these faces (slugs) mixed in with the beans. An original photo and design by me.

How to Prepare the Vegetables
Make sure to rinse all vegetables before eating and cooking. After giving a good rinse, clean the sink out, add beans with enough cold salt water to cover. Two teaspoons salt per quart. Let sit for 30 minutes, then rinse again thoroughly. This will kill any bacteria, bugs and those pesky green bean heads.

Green Bean Stir-Fry
1 tablespoon soy sauce
2 garlic cloves, minced
1 teaspoon sesame seeds, toasted
1 teaspoon brown sugar
1 teaspoon peanut butter
3/4 pound fresh green beans, trimmed
4 1/2 teaspoons vegetable oil
In a bowl, combine the soy sauce, garlic, sesame seeds, brown sugar and peanut butter; set aside. In a large skillet, stir-fry the green beans in oil until crisp-tender. Remove from the heat. Add the soy sauce mixture; stir to coat.

I love the Farmers Market. I am always grateful to the people who share their fruits and vegetables. I hate that you were not able to participate, but it is awesome that you all had your garden. Personally, I love Green Beans and Potatoes together. If I add carrots, I feel like it is the perfect meal.
