Corn Casserole

Corn casserole is a rich creamy savory dish (also known as cornbread casserole.) Add this to compliment your main course meal for the holidays or anytime.

This easy recipe is much like a pudding filled with corn, sour cream, eggs, butter, cheddar cheese and the cornbread muffin mix. I like to spice it up with onions and green chilies.

My family lives too far away, but my husband comes from a large family. Last time we had a r holiday gathering (Dec. 25, 2014) our house had twenty-five people. We had three rooms filled with tables for the Christmas dinner.

When it is my turn to have the family over for one of the holidays, Thanksgiving, Christmas, New Years Day or Easter, I like to add a more creative casserole dish than passing a bowl of corn around the table.

Corn Casserole Recipe


1 (15 ounce) can cream-style corn

2 eggs

1/4 cup butter, melted

1 cup sour cream

1 (15.25 ounce) can whole kernel corn, drained

1 (4 ounce) can diced green chilies, drained

2/3 cup chopped onion (less if desired)

2 cups shredded Cheddar cheese

1 (8.5 ounce) package dry corn muffin mix


1. Preheat oven to 350 degrees F. Grease a 2 quart casserole dish with cooking spray or shortening.

2. In large mixing bowl beat the eggs until they reach a nice yellow-orange color.

3. Next add the cream style corn, sour cream and melted butter.

4. Mix in whole kernel corn, cheese, green chilies and chopped onion.

5. Add the corn muffin mix to the mixture until just moistened.

6. Add to casserole dish and bake in preheated over for 75 minutes; or until an inserted knife comes out clean and the top is golden.

7. Let stand 5 minutes before serving.

Note: Light sour cream can be substituted for regular sour cream. This cream has a lighter taste for those who claim they don't like sour cream, like my husband. But when I have made recipes with sour cream like this one, he has enjoyed it. But then, I don't tell him about all the ingredients. Shhh...Don't tell!

Serve in your best casserole dish to show it off.

Red Corn from Our Garden

This corn came from our garden. The color of red was so rich I had not seen many corn on the cobs this deep in color before, it had to be added to products. This is the design that I made from the photos of our garden corn. Plus a bit of popcorn.

Cooking Experience with Children

Children love to help out. Cooking together is a bonding experience. Teach your children to cook. Even during the holidays. A simple easy recipe such as the Corn Casserole Recipe is something that children and adults can do together. This cooking experience will be the stepping stone to a lifetime of memories that they can pass on to their families.

It may take longer to go over the instructions, so be patient. Don't worry about the clock ticking because it is the holiday. Hungry people are expected to be fed.

Or don't think about that you are the sister-in-law. Family members will be coming over to judge how well the chief of the house can cook.
