In my previous article, 5 Natural Ways to Lose Weight (Even in Lockdown), I mentioned that vegetable consumption was one of the 5 things i did. while reading it again, I thought, "why not share with my readers how I make my vegetable soup?". So, yeah, that's what we gonna be doing today, we gonna be cooking a well garnished, weight loss friendly nigerian vegetable soup! By the way, I call it 'Nigerian' because its origin is Nigeria, you can cook it anywhere in the world. Let's get down to it!

INGREDIENTS
To cook a Nigerian vegetable soup, here are what you need:
✓ Vegetables [washed and shredded] {could be spinach (also called 'Soko'), corlander leaves(also called 'Ebòlò') or callaloo (also called 'Tètè') leaves}.
✓ Locust Beans [a handful or as much as you want].
✓ 3 medium-sized onions [washed and chopped].
✓ 6 Tomatoes.
✓ 4 Scotch Bonnets [also called 'Rodo'].
✓ 3 Cayenne Peppers [also called ['Báwà'].
✓ Crayfishes [washed].
✓ Fish [preferably herrings, also calls 'Sáwá', with the bones removed].
✓ Palm Oil.
✓ Salt.
✓ Cubed Seasoning [though it's not necessary if you're tryna shed weight].

PROCEDURE
✓ Grate the tomatoes, scotch bonnets and cayenne peppers together.
✓ Pour some (there's no regular measurement) palm oil into a clean, dry pot and heat for almost a minute.
✓ Add rinsed locust beans and onions. When adding the locust beans, make sure to drop some amount of water with it into the oil. This is because we are trying to gradually fry, not burn. The water will reduce the heating effect of the oil. Also, the smoke that comes with heating oil will be reduced, so your eyes and respiratory system are safe. Gradually stir for 3 minutes. Make sure it doesn't get burnt.
✓ We are making the stew base (sauce) first, so add the washed and not smoothly grated tomatoes, scotch bonnets and cayenne peppers. Leave to fry for a while (say 5 minutes).
✓ Add water. The amount is basically your choice, depending on the amount of vegetables as well as on how thick or watery you want your soup to be. Allow to boil.
✓ Add the washed crayfish.
✓ Add the washed and, should I say diced, herrings? Just make sure the bones are removed and the fish is in pieces.
✓ Add salt to taste (remember we are shedding weight, so we know better than to make it too salty).
✓ Unless you are watching your weight, add 1 cube of seasoning.
✓ Stir all together.
✓ Cover the pot and allow to boil for, say 10 minutes.
✓ Add the shredded vegetables to the sauce, leave to boil until it's soft.
