How do you make cookies from cake mix? We have the easy recipe (including red velvet cookies)!

Making cookies from cake mix is one of the quickest and easiest ways to fill the cookie jar for holidays, for summer (they're quick to bake), or any time of year. The easy recipe requires only three ingredients, a cookie sheet, and an oven. Stir-ins and frosting are optional. In no time you'll have tasty, delicious cookies with ingredients you probably already have on hand.

There are multiple variations of cookies made with cake mix using add-ins such as chocolate chips, and we'll tell you about a few of our favorites below then give you the opportunity to tell us about yours.

The picture you see here is cookies made using red velvet cake mix, baked then topped with a dollop of canned frosting. The frosting is optional, but what a pretty Christmas or Valentine's Day cookie these make! (Tip: Try the new Pink Lemonade cake mix and frosting for some pretty pink cookies for Easter or for a baby shower!)

I made the batch of cake mix cookies in the picture above using a Pillsbury vanilla cake mix, creamy vanilla frosting, and colorful Christmas "sequins." They looked beautiful and tasted great. I'll definitely be making more this year.

Here's the recipe:

Makes about 30 cookies.

Ingredients

  • 1 box cake mix (flavor of your choice)
  • 2 large eggs
  • 1/3 cup cooking oil
  • stir-ins and/or frosting (optional - see notes below)

Instructions

  1. Preheat oven to 350 degrees. Pour the dry cake mix into a mixing bowl. Add the eggs and cooking oil. Add the stir-ins if using. Stir well to make cookie dough.
  2. Use a teaspoon to scoop out dough. Using your hands, roll dough into a ball about 3/4 to 1-inch in diameter. Place balls of dough on cookie sheet about 2 inches apart.
  3. Bake at 350 degrees for 8 to 10 minutes or until cookies are done. Note that the cookies will rise and tops will crack, then will fall as they cool. Cool completely on cookie sheet. Frost tops or decorate as desired. (Scroll down the page for more pictures and suggestions.)

Recipe Notes

  1. Suggested stir-ins include one cup chocolate chips with devil's food cake, peanut butter chips with chocolate fudge cake mix, coconut, nuts, or raisins with spice, carrot, or banana cake mix, nuts, oatmeal, raisins, dried fruit pieces, etc.
  2. Use canned or homemade frosting if desired. Try cream cheese frosting with red velvet cake mix, vanilla with lemon cake mix, chocolate fudge with devil's food cake mix, etc.
  3. Baking time varies with the type of cookie sheet you use and the true temperature of your oven. Cookies should be soft when you remove them from the oven. I suggest letting the first batch cool then checking the consistency of the finished product. Adjust baking time, adding more time if they're too soft. If in doubt, go ahead and take them out.

These were my go to cookies last Christmas, they were so easy and fast to make and so many different combinations. I stock up on cake mix when it's on sale for only 59 cents. SOOOO cheap that way, plus if you can find a coupon it almost makes them free.
