I love baking. Plyushki are absolute favourites in my family and my friends keep asking me for the recipe. It’s why I decided to write about it.

This cinnamon rolls recipe was tried and tested for a few generations in our family.

I have learned how to make cinnamon rolls with a twist, or plushki as we call them, from my mum and she learned the art of baking from her mother.

You will be surprise how quick and easy you can make a bunch of hot and yummy rolls to delight your children, friends and family.

Warning: the deliciously teasing smell of freshly baked cinnamon rolls will bring your whole family to your kitchen.

  • 300 ml warm water
  • 1 tsp salt
  • 25 g butter
  • 500 g all purpose white flour
  • 1 tbsp sugar
  • 7 g sachets of yeast
  • 10 -15g melted butter
  • sugar

  1. I usually make the dough in a bread maker.
  2. 1. Pour 300ml of warm water into a bread maker's pan.
  3. 2. Add 1tsp of salt.
  4. 3. Put 25g of butter (chopped into small pieces) in the pan.
  5. 4. Add 500g of all purpose white flour.
  6. 5. Add 1 tbsp of sugar.
  7. 6. Add 7g of yeast.
  8. 7. Set your bread maker on dough and press start.
  9. In my bread maker it takes 1 hour 10 minutes for dough to get ready.
  10. You can mix the dough by hand or use a food processor if you like.
  11. 1. Mix together water, salt, sugar, butter and yeast in a big bowl.
  12. 2. Add flour, mix well.
  13. 3. Knead right in the bowl or on the floured clean work surface for 5-10 minutes until smooth.
  14. 4. Leave it in the bowl to rise for about an hour or till double in size.
  15. When the dough is ready take it out of the pan and put it on the floured working surface.
  16. 1. Roll the dough to rectangular shape (my baking board is 35cm X 50cm and so I roll my dough to this size).
  17. 2. Spread ruoghly ¾ of melted butter over rolled dough.
  18. 3. Sprinkle it with sugar and cinnamon.
  19. 4. Fold the top third of the rectangle; spread the rest of melted butter over the fold.
  20. 5. Sprinkle it with sugar and cinnamon.
  21. 6. Fold the bottom third of the rolled dough.
  22. 7. Cut it across into 2.5- 3cm wide strips.
  23. 8. Take one piece at a time and twist it to form a rope like long piece, then fold it to form a loop and tackle ends underneath (look for photo instructions below).
  24. 9. Put rolls on the baking tray leaving some spaces in between.
  25. 10. Let it rise for 15-20 minutes.
  26. 11. Before baking brush them lightly all over with a cold strong black tea and sprinkle with sugar.
  27. 12. Bake at 190C- 200C for about 15 minutes or until golden brown.
  28. My children love them best warm right from the oven, but for me plushki (cinnamon rolls with a twist) are delicious cold or hot.

I like to use freshly grounded cinnamon for my rolls. I just love the aroma... I usually keep a pack of cinnamon sticks in my store cupboard and I use electric coffee grinder for the job. This way I never run out of my favourite spices.

If you do not like cinnamon or simply run out of it and don't have time to go back to shop ...

Try to make the rolls anyway... it works fine even without cinnamon, just sprinkle some sugar on dough or use poppy seeds, add raisins or chopped nuts.

Look excellent. There is a 'twist' in similar rolls Mediterranean tradition where instead of cinnamon sweet tahini filling is used. They are really nice. Will post a recipe soon I hope.

I love baking! I love love love love love it! lol did I say ; I love baking! Cinnamon rolls used to be my favorite. My mom pretty much has the same recipe, except she uses milk instead of water, so I know yours must taste awesome! But gluten free cinnamon rolls are not that great and I avoid yeast so haven't had any for years. Great photos!
