About baked beans

I don't think I have ever met a baked bean I did not love; canned homemade there all ok with me. But with food costs going up and my store always being sold out, I raided my mom's recipe box again for the recipe I loved as a child. After finding this recipe, I don't think I'll ever go back to buying canned beans. These are so good.

  • 4 cups Water, Pulse more to cook beans
  • 1 pound Dried navy beans
  • 1 large Onion, Diced
  • 1/4 pound Salt pork with rind, Sliced thin
  • 2 cloves Garic, Fine chopped
  • 1/4 cup Brown sugar
  • 4 tablespoons Molasses
  • 1 teaspoon Salt, To taste
  • 1/2 teaspoon Dried mustard
  • 1/4 teaspoon Black pepper, To taste

  1. In pot add navy beans and cover with water. Bring to boil and let boil for 3 minutes. Remove from heat and cover. Let set for 1 hour.
  2. Drain the water. Add water to cover the beans again. Bring to boil and then turn down to simmer cover and simmer until beans are tender, about an hour. Do not boil as this will break open your beans.
  3. Drain beans but keep the water. Layer beans, onions, and pork in a Dutch oven, casserole pan, or castiron.
  4. In bowl mix brown sugar, molasses, salt, pepper, mustard, garlic and bean water.
  5. Pour sugar mix over beans to just cover the beans.
  6. Cover and cook for 3 hours at 350. Stir occasionally. Then uncover and bake another 30 minutes or until the beans are as soft as you like.
