Oysters Are So Delicious

Over my 40 plus years as a Chef I have worked with Oysters and have developed several unique recipes that people have simply raved about over the years. But first lets do a little bit of history about oysters and a few other important things.

People eating oysters can be traced back to very early Roman times where there are records of a ton of oysters being served at one meal. The early Romans served them steamed with salt, lemon and homemade crackers. It was not until the time of Cleopatra that we find reference to oysters being served raw and also the claim at the same time that the oysters are a aphrodisiac. Cleopatra is said to have heard about the oysters being a aphrodisiac from a slave and she is said to have fed them to Marc Anthony in great numbers.

Native Americans on both coasts considered oysters as a stable food source and some places in Florida and other Gulf Coast areas there are still huge piles of tons of oyster shells from Native American Oyster feasts that happened hundreds of years ago. So yes oysters have been enjoyed in the USA for quite a bit longer than you may have thought.

Deep Fried Oysters Southern Style


Oyster Dipping Sauce

Here is the recipe for the best oyster dipping sauce you will ever eat. For this recipe you will need the below. 

2 Cups of Regular Ketchup

1/4 Cup of Dukes Regular Mayonaise

1 Level Teaspoon of Fine Ground Cayenne Pepper

1 Teaspoon Lemon Juice

Mix together very well with a wire whisk or do it in a blender. This is a very simple dipping sauce but it is oh so good. Refrigerate a mininum of 2 hours before serving with your Fried Oysters.  


Deep Fried Oysters Southern Style

I have been told that I make the best fried oysters in the world and yes you can call my oysters recipe, Deep Fried Oysters Southern Style. In 1999 I won the Golden Fish and $1000.00 for this recipe at the North Florida Food Show.

And to make this recipe you will need a half pint or pint of oysters from your local supermarket or seafood shop. I would suggest a pint as these are the most wonderful oysters you will ever eat. Plus I will reveal here the world famous oyster dipping sauce for the oysters.

You will need.

1 Large Bowl that you have added 2 cups of whole milk to and then you want to add 2 large eggs and with a whisk beat the eggs up into the milk very well.

You will also need another large bowl that you want to add the below to.

1. 2 Cups of Plain Flour ( Also called All Purpose Flour )

2. 1 Cup of Self Rising Yellow Cornmeal.

3. 1 Teaspoon Salt

4. 1 Teaspoon Black Pepper

5. 1 Teaspoon Fine Ground Cayenne Pepper

Mix all 5 ingredients together well.

Now you want to put your oysters a few at a time into the milk and egg mixture. Then put them a few at a time into the bowl of dry ingredients and shake the bowl. Then put them back into the milk and egg mixture and back into the dry mixture. Place your breaded oysters onto a tray or plate and refrigerate them for a mininum of 1 hour. You want your oil at 350 degrees and then you want to fry your oysters a few at a time. Drain your oysters well on paper towels and serve at once with our oyster dipping sauce.

Oyster Stew Recipe - Cracker Style

Delicious Oyster Casserole

If you like Oyster Stew you will really love this Oyster Casserole. This really is a very simple recipe that I have made at some of the finest restarants in the south and everyone just simply loves it.

You will need a large casserole dish that you have sprayed well with pam.

It takes 2 pints of oysters and a box of regular saltine crackers to make this dish in the casserole dish I usually make it in. You will need the below ingredients to make this delicious oyster casserole.

1. 2 Pints of Oysters

2. 1 Regular Size Box of Saltine Crackers

3. 2 Cups of Cream

4. Margarine

5. Salt

6. Black Pepper 

Okay spray your casserole dish with pam and place a layer of oysters in the bottom of the caserole dish a layer of crushed saltine crackers and on and on until you use up all your oysters and crackers ending with a layer of crushed saltine crackers on top. In each layer put a few small amounts of margarine. Also be sure to sprinkle each layer with salt and pepper. Belore you put the last layer of crackers on the top pour the two cups of cream down through the caserole dish. Then finish up with a top layer of crushed saltine cracker crumbs and dab the top with margarine. Bake in a 350 degree pre heated oven for 30-45 min. Serve at once and enjoy. We have often made and served this oyster casserole in individual casserole dishes so each person gets their own small oyster casserole.

Old Fashion Oyster Stew


Old Fashion Oyster Stew

This really was my Grandmothers recipe but I have been serving it for about 40 years all over the south at some of the Souths finest seafood restaurants.

You will need some bowls that you can heat in the microwave.

For this recipe you will need.

1. 2 Pints of Oysters

2, Margarine

3. 1 Quart Of Heavy Cream

4. 1 Quart of Whole Milk

5. 1 Teaspoon Fine Powdered Cayenne Pepper

6. Fresh Chopped Parsley for Garnish

In a large stock pot place your oysters including the oyster juices they came in and a large cooks spoon of margarine. Melt your margarine and as soon as it is melted add your heavy cream and your milk. Heat slowly until almost but not quite at a boil. Reduce heat to simmer and add your cayenne pepper and stir it in. Turn off and serve in the heated bowls along with saltine crackers. Top each of your small bowls with a few sprigs of fresh chopped parsley as a garnish. Some people like to offer sherry on the side in case some one wants to add a few drops to their bowl. If you make a recipe on this hub page please post a comment below and let us know what

I have been looking for a good fried oyster recipe. After several recipes I now have it. These are wonderful. -- I have never maid stew but made this one, super good. Made both for my parents 68th anniversary-Mom loves oysters. She was so happy. Said both was the best she ever had.
