Watercress soup is not a common or popular dish in Western countries. However, the Chinese-style watercress soup is very popular amongst the Chinese, and in many Asian countries. The recipe provided here is the Chinese-style watercress soup.

Watercress is not a popular item in the marketing list of an average Caucasian. In fact in many places you can’t find watercress. In Asian countries there are lots of varieties of leafy vegetables. Watercress is one of the most common and popular leafy vegetables. Watercress has lots of medicinal properties and contains large amounts of vitamins A, B, C and K, plus folic acid, iron, calcium and betacarotene. The most important elements present in watercress are phytochemicals and antioxidants. There have been researches done on watercress and its healing properties, notably on its ability to fight cancer.

The Chinese use watercress mainly in soup. It is delicious and is believed to aid digestion. Below is the recipe for the Chinese-style watercress soup. You can take it as a soup by itself, or like the Chinese take it as one of the side dishes with rice.

Pork ribs

Ingredients (serves 4 persons)

  • 250 gm watercress, wash and cut into shorter stalks
  • 300 gm (12 small pieces) pork ribs, chop into 1-inch pieces
  • 2 pieces dried oysters, cut into halves
  • 1 piece dried cuttlefish, (optional)
  • 1 piece sweetened dried dates, or honey dates
  • 6 pieces red dried dates
  • pinch salt, or to taste
  • 1 teaspoon (or to taste) pepper corns, slightly crush
  • 1 teaspoon soya sauce (optional), or to taste
  • 1.5 liters water, will end up with about 1 liter

  1. Boil the water in a pot.
  2. Put in pork ribs, dried oysters, dried cuttlefish, and all the dried dates, and pepper corns.
  3. Continue to simmer for at least an hour, or until the pork ribs are tender to your liking.
  4. Add in the pinch of salt and the teaspoon of soya sauce.
  5. Put in the watercress and boil for another half hour, or until it is soft. Ready to serve; and I prefer to take the soup hot.
  6. If soup is too thick to your liking, you may add water to dilute to your preference.

Clearer Steamed Watercress Soup

You will notice that my water crest soup looks a bit murky and thick. If you prefer a very clear-looking water crest soup, then you need to steam it. Personally I like the clearer steamed version. But steaming will take a longer time, and will also use more utensils. I try to avoid washing too many cooking utensils as i hate washing dishes!

I love watercress and eat it on the side of meals as a salad when I get it. I never thought of putting it in soup and I do think that this sounds good.

Watercress soup is one I have not had. So, thank you for sharing. It contains a variety of ingredients that sound as though they will make a marvelous soup. Bookmarked to add to my files.
