I am sharing my research with you on options for vegetarian burgers. I spent quite a few hours reading and collecting recipes from the internet. I tried to ensure that these recipes are significantly different from each other, and not just a slight variation on the same theme.

I recently decided to strive for a more vegetarian diet, and reduce my consumption of animal protein. Increasingly doctors are recommending that meat eaters consider a 75% vegetarian diet. There are benefits, such as significantly decreased saturated fats, which may decrease cholesterol and triglycerides.

For me, I felt like I had more reflux symptoms when I combined animal protein and starches in the same meal. I heard American Idol Ruben Studdard proclaim that he is now a vegan and enjoys vegan versions of Soul Food and Southern comfort food. This started me looking for classics like vegetarian versions of hamburgers and meatloaf. If I could find vegetable and grain versions of these foods, I could eliminate my issues with food combining.

Ruben endorses Morning Star products. I have tried a few of these, but decided to minimize my use of these products because I’m not crazy about the idea of “texturized vegetable protein”, or TVP, nor am I convinced about the health benefits of soy in general. I have included a brief video of Sally Fallon of Nourishing Traditions on this topic. My search of veggie burger recipes is limited to burgers made with vegetables and grains, although I did include a few recipes that used tofu, a soybean product.  Otherwise, I avoided soy products, and definitely no texturized vegetable protein. 

My advice to you if you are a meat eater, is not to expect hamburger taste or texture.  Just approach vegetarian burgers and patties as new and interesting options for meatless sandwiches.  This being said, many of the recipes linked below specify frying 5 to 10 minutes per side to make the burgers crispy and firm.  I think when I find the veggie burger with the most satisfying texture and taste, I will modify it as a meatloaf recipe. 

I must admit I have not yet experimented much with determining the ‘just right’ amount of frying time to give veggie burgers a firm and crisp texture.  Although I have personally chosen to avoid TVP, I have to concede that the texture is much more meat-like.  If you are curious, there are multiple submissions for veggie burgers using Morningstar patties on AllRecipes.

The majority of the recipes below are from AllRecipes.com, which has a recipe calculator. This means if the recipe is for 12 or 15 burgers, and you only want to make 6, just plug 6 into the portions box, and it will calculate ingredient amounts.

I have listed most of the ingredients to each recipe, but not things like salt, pepper, water, or oil for frying patties. I have also not listed the ingredient amounts. I do not want to circumvent the originators of the recipes. Also I do not want a 10,000 word hub. I think the ingredients list will give you an idea of which vegetarian burger recipes you might want to try. Then just follow the links.

Likewise I have not provided step by step instructions for recipes. Some use canned beans or cooked grains, others start with dried beans and raw grains. For most recipes, ingredients, such as beans, rice, or vegetables, are prepared in a food processor. Most of the patties are pan fried until crisp and firm.

Veggie Burger Recipes 1-8



Lentil Burgers

Ingredients: Dry lentils, tofu, flour, onion, garlic, chili powder, liquid smoke, tamari.

Comments: Mixture is spooned onto hot skillet or griddle in the shape of a burger.



Carrot Rice Nut Burgers

Ingredients: Brown rice, cashews, sunflower seeds, onion, carrot.

Comments: Mixture is formed into 20 patties and grilled.



Ancient Grain and Vegetable Patties

Ingredients: Millet, quinoa, cornmeal, flour, almonds, sunflower seeds, red onion, baby portabella mushrooms, carrots, celery, red pepper, garlic, spinach, Italian spices, soy sauce, balsamic vinegar, and hot pepper sauce.

Comments: Lots of ingredients, but I’m anxious to try this recipe. Form into 6 patties and bake at 350º for 30 minutes.



Martha Stewart Veggie Burgers

Ingredients: 8 oz portabello mushrooms, zucchini, quinoa, breadcrumbs, egg, shallot, red pepper flakes, and olive oil.

Comments: Chop mushrooms in a food processor. Shred zucchini and press water out. Form veggie burger mixture into 6 patties and fry until crisp exterior. Serve on split buns with cucumbers, sprouts, and yogurt sauce (recipe included). Use dairy substitutes for vegan friendly version.



Portabella Burgers with Balsamic

Ingredients: 8 medium or 4 extra large portabello caps, red pepper, garlic, olive oil, balsamic vinegar, garlic.

Comments: Another recipe from Martha Stewart’s site. Portabello caps and red pepper are marinated, then grilled. Serve on buns with lettuce and goat cheese (or vegan friendly substitute). Serves 4.



Greek Style Quinoa Burgers

Ingredients: Quinoa, carrot, great northern beans, bread crumbs, scallions, cumin, egg.

Comments: Form mixture into 4 patties and pan fry. Serve in pita pockets with yogurt and cucumber slices. I love that these burgers are served in pita pockets. Since veggie burgers are not firm like meat, they can be crumbly, but the pita will contain your burger. Use dairy substitutes for vegan friendly version.



Nut Burgers

Ingredients: Walnuts, sunflower seeds, chickpeas, red onion, egg, fresh parsley.

Comments: Form mixture into 2 patties and pan fry. Serve in pita pockets with a slice of cheese, romaine, tomato, avocado and Ranch dressing. Use dairy substitutes for vegan friendly version.



Vegetable and Tofu Burger

Ingredients: Carrot, zucchini, tofu, onion, celery, egg, bread crumbs, Thai curry paste, fresh basil.

Comments: Form mixture into 4 patties and pan fry. Use egg substitute for vegan friendly version.

Butter Bean Burgers

Ingredients:  Butter beans, onion, jalapeno pepper, cracker crumbs, egg, shredded cheese. 

Comments:  Form mixture into 4 patties and pan fry.  Use dairy substitutes for vegan friendly version. 

 

 

Tofu Burgers

Ingredients:  Tofu, onion, celery, egg, shredded cheese. 

Comments:  Spoon drop mixture into hot skillet in 6 portions to pan fry.  Use dairy substitutes for a vegan version. 

 

 

Chickpea Falafel Burgers

Ingredients:  Garbanzo beans, mushrooms, green onions, fresh cilantro and parsley, curry powder, cumin, bread crumbs, egg whites. 

Comments:  Divide mixture into 4 portions for pan frying.  Use egg substitute for vegan version. 

 

 

Jamaican Burgers

Ingredients:  Black beans, rice, bread crumbs, onion, fresh garlic and ginger, habanero pepper, allspice, nutmeg. 

Comments:  Form into 6 patties and pan fry.

Ingredients:  Carrots, bread crumbs, wheat cereal, onion, garlic, eggs, mayonnaise,

Lentil Patties

Ingredients:  Brown lentils, Grape Nuts cereal, onion soup mix, walnuts, bread crumbs, milk, poultry seasoning, eggs. 

Comments:  After refrigerating overnight, form mixture into 8 patties and pan fry.  Use dairy substitutes for vegan version. 

 

 

Eggplant Burgers

Ingredients:  Eggplant rounds, Monterey Jack cheese, traditional hamburger toppings. 

Comments:  Bake, then fry 6 eggplant rounds and top with cheese to melt.  Prepare on hamburger buns with lettuce, tomato, onion, pickles, mayo, ketchup and mustard.  Use cheese substitute such as Toffuti, for vegan version.

Ingredients:  Bulgur, cashews, sunflower seeds, eggs, soy sauce, chili powder, garlic, hot pepper sauce. 

Comments:  Form mixture into 6 patties.  Place on oil sprayed foil on the grill.  Use egg substitute for vegan version.

Select large portobello mushrooms.  Remove stems, wash, and drain.

Garbanzo Bean Patties

Ingredients: Chickpeas, onion, bread cubes, eggs, thyme.

Comments: There are other garbanzo veggie burgers included here, but I included this one for those looking for something simple, with few ingredients. Form into 12 patties and pan fry.

 

Grilled Veggie Portobello Mushroom Burgers

Ingredients: Portobello caps, eggplant, yellow squash, zucchini, balsamic vinegar, blue cheese.

Comments: Marinate vegetables in balsamic vinegar in the frig 2 to 24 hours. Grill vegetables. Top mushroom caps with cheese. Arrange vegetables on 6 hamburger buns. Use cheese substitute for vegan version.

Polenta and Wild Rice Burgers

Ingredients: Rice, wild rice, polenta, water, garlic, sage, rosemary, shredded cheddar.

Comments: Cook rice with spices in 2 cups water. Add polenta and 3 more cups of water. Stir in cheese when all water has been absorbed. Simmer 20 minutes. Pour mixture into baking dish to set. When cool, use large glass to cut into 4 bun-sized patties. Grill or fry. Serve with favorite toppings. Use cheese substitute for vegan version.

All Star Veggie Burger

Ingredients: Garbanzo beans, oat bran, quick oats, brown rice, tofu, fresh basil, garlic powder, sage, Korean barbecue sauce.

Comments: Mash and drain water from tofu and combine with barbecue sauce. Combine with bean mixture. Form into 8 patties and pan fry.

Veggie Burgers

Ingredients: Carrots, yellow squash, zucchini, oats, flour, shredded cheddar, onion, garlic, egg, soy sauce.

Comments: Cook shredded vegetables in skillet. Form into 8 patties and coat in flour. Oil grill grate and grill 5 minutes per side.

Grilled Portabellas with Caramelized Onions and Avocados

Ingredients: Portabello caps, red onion, avocado.

Comments: There are several other portabella burger recipes featured here, but I included this one for those looking for a simple approach. Cook thin sliced onions in olive oil in a skillet. Broil or grill 4 mushroom caps about 5 minutes per side. Place mushroom caps on buns and top with onions and avocado.

I have been curious about Portobello burgers for a while, and finally got around to trying these. They were ultra easy. My brother and I agreed they are our favorites of all the veggie burgers we have tried so far, including commercial brands from the grocer freezer, restaurant burgers, and several homemade veggie burgers we made. We used Hawaiian Bread buns which were soft and slightly sweet.  See my photos to the right.

Bean Burgers

Ingredients: Great northern beans, stuffing mix, flour, cornmeal, eggs, onion, garlic powder, Worcestershire, liquid smoke, pepper sauce.

Comments: Form mixture into 15 patties. Coat in cornmeal and pan fry. Serve on hamburger buns or in pitas. Use egg substitute for vegan version.

Zucchini Patties

Ingredients: Zucchini, flour, onion, eggs, Parmesan, mozzarella.

Comments: Another relatively simple recipe. Mix shredded zucchini and other ingredients. Spoon drop mixture in 4 patties into hot skillet. Use dairy substitute for vegan friendly version.

Italian Vegetarian Patties

Ingredients: Brown rice, red lentils, bread crumbs, Parmesan, eggs, basil, garlic powder.

Comments: Form mixture into 16 patties and pan fry, two to three minutes per side. This is an AllRecipes.com recipe, so don’t forget you can recalculate the ingredients for fewer patties. Use dairy substitutes for vegan friendly version. I used leftover cooked lentils and rice.


Best of Everything Veggie Burgers

Ingredients: Brown rice, black beans, bread crumbs, green bell pepper, onion, mushrooms, garlic, mozzarella, eggs, chili powder, cumin, hot sauce.

Comments: Form mixture into 6 patties. Cover grill with foil, and brush with oil. Grill burgers about 8 minutes per side. Use dairy substitutes for vegan version.


Spicy Black Bean Cakes

Ingredients: Black beans, sweet potato, bread crumbs, onions, garlic, jalapeno pepper, cumin, egg. Sauce is sour cream, lime juice, jalapeno.

Comments: Form mixture into 8 patties. Broil 8 to 10 minutes, turn and broil 3 minutes. Serve with lime sour cream.


Mexican Bean Burgers

Ingredients: Kidney beans, carrot, bread crumbs, flour, onion, salsa, green bell pepper, chili powder.

Comments: Form into 8 patties and pan fry about 8 minutes per side.


Garbanzo Bean Burgers

Ingredients: Garbanzo beans, red bell pepper, carrot, garlic, chile pepper, fresh cilantro, tahini paste,

Comments: Form mixture into 4 patties. Bake 20 minutes, turn and bake additional 10 minutes.


OMG Good Nut Burgers

Ingredients: Almonds, onion, carrot, tahini, soy sauce, lemon juice.

Comments: Form into 6 patties and broil 5 minutes each side.


Homemade Black Bean Veggie Burgers

Ingredients: Black beans, bread crumbs, green bell pepper, onion, garlic, egg, chili powder, cumin, Thai chili sauce.

Comments: Form mixture into 4 patties. Bake 10 minutes each side, or grill 8 minutes per side.


Blue Plate Diner Vegan Burger

Ingredients: Garbanzo beans, black beans, oatmeal, Panko bread crumbs, brown rice flour, onion, celery, chili powder, garlic powder, onion powder, seasoned salt, cayenne pepper.

Comments: This Veggie Burger is popular at the Salt Lake City, UT Blue Plate Diner. I discovered it on Food Network’s Diners, Drive-Ins and Dives hosted by Guy Fieri (Season 4, Episode 2, Diners You Sent Me To). While the diner staff goes through the list of ingredients, with a demonstration, unfortunately the show does not give a recipe. I appreciate this post and printed one to try. HOWEVER, as a vegetarian my experience is that its hard to find recipes for veg burgers that are tested adequately for texture and stick-togetherness when cooking. Except for the recipes such as porto or zukes grilled, veg patties are notorious for becoming a gloppy mess when trying to prepare them. I'd have like to have actual reviews I supposed to help me be more eager to try.

Fossillady I've never been a milk drinker, but for cooking I like the almond milk. The rice milk seems really thin. I haven't tried the hemp milk yet.

Sunhawk thanks so much for responding! I really appreciate the tips. I think getting the right texture in the mixture and in the frying is key.

I wanted to clarify about the oats because the Blue Plate Diner uses cooked oats for their veggie burger. I might try my luck with walnuts. I used soaked walnuts with sweet pickle, purple onion and mayo for a mock tuna experiment and really liked it.

Either quick or natural steel-cut oats in a veggie burger is fine. The entire mix needs to be moistened to soften the oats and impart the nut flavor. The egg will transfer the flavor of the nuts throughout the mixture. If you don't want to use eggs in the mix, olive oil will also do the trick in moistening the mix. In fact, any oil will do the job.

Medium size patties are best; too thin and they fall apart. Experiment. I fry mine crispy in a cast iron frying pan over a medium heat. And peanut oil as a frying medium suits my taste. Slop mayo on a bun with a slice or two of tomato and shredded lettuce and chow down.

Thanks MKayo. I think the products like Morningstar have come a ways with decreasing the unrecognizable ingredients and excessive additives too. I still don’t like the idea of TVP though.

Not quite. Experiment with different mixes of nuts and oatmeal, in about 60-40 measurements, and the texture is very close to hamburger. (I use peanuts or walnuts.) Don't grind the nuts into powder. Grind them to about the size of peppercorns. Also add in diced onion and a tad of carrot - not too much carrot as it overwhelms the subtle nut taste you want to come through. Throw in sage, salt and pepper to taste. Add appropriate number of eggs to just moisten the mixture. Refrigerate overnight. Fry in peanut oil and your veggie burger will almost Moo!

I'm not in any sense of the word vegan but I have to say that there is this one restaurant that serves vegetarian as well as non-vegetarian food but they serve the Grilled Veggie Portobello Mushroom Burgers that you mentioned and, honestly, that's the only thing I order at that restaurant. Those burgers are delicious.

Thanks LisaHW. I'm glad you shared your preferences. Interesting about Gardenburger. I tried some from Costco, which were much more reasonably priced than Morningstar, and seemed to have fewer additives. I didn't have any unpleasant symptoms.

I NEVER microwave anything anymore. It changes the structure of food. Microwaving may cause harmful mutations. Also is thought to deplete nutritional value of food. If you surveyed naturopaths, I'd guess all of them recommend to retire your microwave.
