Vegetables in a Clay Pot
You will love and maybe even crave your vegetables when you bake them in a full flavor clay pot! This is both tasty and very healthy. These vegetables make great sides for a lovely piece of meat. Or serve them over rice as a full meal too.
The next day re-heat them in a skillet and enjoy them all over again. The skillet will give the vegetables some crisp. Or, put these in a home made soup. They go in almost any soup from the obvious vegetable soup to bean soups.
It is a wonderful way to eat your veggies and get most of the nutrients from them.
The vegetables used here are Mexican squash, onions, bell peppers, celery, tomatoes, and garlic. There is no reason that you cannot change out the vegetables to suit what is in season. Potatoes are especially nice baked in the clay pot method. You may exchange the Mexican squash for a more traditional zucchini squash. I just happened to have Mexican squash on hand.

You can take these vegetables to other cultures and tastes by using those spices. Using a Chipotle mixture would make a wonderful Southwest taste. I would add these vegetables to my burritos. Greek spice mixtures take it to the sunny Mediterranean.
This can make a basic vegetable mixture compliment any type of dinner that you are cooking. You don’t have to go to expensive restaurants to have different cultural dining experiences if you know the basic spices of that culture.

Clay Pot Cooking
A clay pot is a single vessel that can provide vegetable steaming, stew pot cooking, a soup pot, fish poacher, and even a brick oven roaster.
The advantages of clay pot cooking include that it needs little water, and NO additional fat. The food is so very attractive when you remove the clay pot lid once the cooking is done. This makes the table presentation lovely.
Also, the closed environment of the clay pot means that more of the vitamins and nutrients are retained.
The clay pot must be prepared by soaking the pot in water for at least 15 minutes. The pot must also be placed in a cold oven and then the temperature is set. The pot will break if you do not soak it and place it in a cold oven!!
You may not use your clay pot over stove burners or under the broiler. If you use a parchment paper on the bottom and side of the pot, you will have easy clean-up. I have not tried this though. I have sprayed the pot lightly with cooking no-stick oil spray though. If you should have a real stuck on mess to clean off the pot, soak it overnight in the sink with baking soda.
Although, I know the clay pot may be used in the microwave, I can see no advantages to this!

Chicken wings (any cut of chicken to include a whole chicken)
Split pea soup

1 hour 20 min
- 2 onion, cut in chunks
- 3 Mexican squash (or zucchini), cut in chunks
- 2 bell peppers, cut in strips
- 6 tomatoes, cut in chunks
- 1 eggplant, cut in chunks
- 3 ribs celery, cut in chunks
- 3 T. olive oil, I used a flavored olive oil
- 1/2 C. white wine, or 1/4 cup water
In the Oven
- SOAK THE POT IN WATER FOR AT LEAST 15 MINUTES!
- While soaking the pot, wash and cut up all the vegetables
- Toss the vegetable mixture with the olive oil and the spices
- Place all vegetables in pot and pour the wine over them. You may omit the wine entirely and use 1/4 cup of water instead if you wish
- Place in a COLD OVEN. Set the temperature to 425 degrrees. Once the temperature of the oven is 425 degrees then start the timer for 60 minutes.

The veg is soft not crisp. I have not varied the cook time. When I re-heat the next day I do use a non-stick fry pan and this crisps them up a bit. I really like adding them to all kinds of things the next day. My husband mashes them and puts butter on them and he likes that.

Looks good. I just wonder, do the veggies remain semi-crisp or they very soft? Can you vary the cooking time to vary how they turn out? I know you can with other cookware but only have cooked pizza on clay so am unsure.
