Vegetable Pulao with Fried Bread

Vegetable pulao is a great substitute for chicken pulao, and it is a perfect recipe to pack for lunch. The vegetables and spices added to the rice make it healthier and flavorsome. The fried breads bring an additional taste to the dish. Kids will love this recipe, and it will be the best trick to make them eat vegetables. Onion raita and brinjal curry create a perfect combo along with this pulao.


  • 3 tablespoons cooking oil
  • 2 bay leaves
  • 6 cloves
  • 4 cardamom
  • 2 inches cinnamon
  • 1 big size onion, sliced vertically
  • 1 medium size carrot, roughly chopped
  • 10 nos.of beans, roughly chopped
  • 2 medium size potatoes, roughly chopped
  • 2 small size tomatoes, roughly chopped
  • 2 tablespoons ginger-garlic paste
  • 5 nos.of green chillies
  • 1 cup of curd
  • Handful of mint leaves
  • 1 tablespoon chilly powder
  • 300 grams rice, soaked for 20 minutes
  • salt, to taste
  • fried bread pieces


  1. Heat oil in a cooker, add the bay leaves, cloves, cardamom, and cinnamon. Then add the onions and saute it until it becomes golden brown.
  2. Now add the vegetables and allow them to cook for another five minutes in low heat.
  3. At this stage, add the tomatoes, ginger-garlic paste, green chillies, curd, mint leaves, chilly powder, salt and mix well with the veggies.
  4. Now, add the rice and water over it. The rice and water ratio should be 1:2. Close the cooker and allow it to cook for 4 whistles.
  5. Meanwhile, fry the bread pieces in medium heat until it becomes golden brown. Once the steam got released from the cooker, add the bread pieces, and close the lid. Serve after 5 minutes along with onion raita or brinjal curry.

I have never tried a recipe like this before. But the final dish looks great and with all the spices I bet it has loads of flavour.
