Tomato Pickle Recipe
Ingredients : :
Tomatoes : ½ Kg, red, ripe, pulpy, washed, dried and cut finely
Red dried Chilies : 2
Mustard Oil : ½ cup
Cumin seeds : 1 tsp
Fenugreek seeds: 1 teaspoon
Mustard seeds : 1 teaspoon
Ginger paste : 1 teaspoon
Garlic paste : 1 teaspoon
Asafoetida : ½ teaspoon
Red Chili powder : 3 teaspoons
Turmeric powder : ½ teaspoon
Curry leaves : 20 in no., washed, dried and chopped
Lime juice of 2 limes
Salt : 3 teaspoons
Method : :
Heat 2 tsp oil in a pan. Add chopped tomatoes and salt.
Stir constantly for 2 minutes. Cover with lid and cook on low flame for 5 minutes.
Open lid, stir and cook covered with lid for 5 minutes.
Do this until the tomatoes get cooked and soft and mushy, and all the moisture gets dried up.
Switch off flame and let it cool.
Grind lightly in a mixer grinder.
Heat ½ cup mustard oil in a pan and add mustard seeds, cumin seeds, and fenugreek seeds.
When they crackle add ginger garlic paste and fry on low flame.
Add curry leaves and red dried chili cut into 3 to 4 pieces.
On very low heat add chili powder, turmeric powder, asafetida and stir.
Add tomato paste and lime juice and mix well.
Fry till oil separates.
The tomato pickle is ready and emits a rich aroma.
When cool transfer in dry glass bottles.
At room temperature this pickle will remain good for one month.
If refrigerated it will remain good for 3 months.
Serve with boiled and cooked rice or parathas. Or with regular meals.
Tastes and smells great. Very very tasty and lips smacking.
