This Blackberry Jam Cake Is out of This World

I was born in the south. I live in the south and will die in the south. This is only a small part of the memories I share.

Blackberry Jam Cake is Simply Fantastic!


This recipe is used by permission of Pam Avery and Alexis Nash. And make no mistake. These two girls know how to cook great food. Thank you, Kenneth.


½ c. Crisco

1 ¼ c. sugar

3 eggs

1 c. blackberry jam (homemade with seed is best)

2 ¾ c. all purpose flour

½ tsp. Soda

2 ½ tsp. Bakig power

½ tsp. Salt

½ tsp. Allspice

½ tsp. Cinnamon

½ tsp. Nutmeg

½ tsp. Cloves

1 c. buttermilk

Now Mix All These Cream Crisco

and sugar, beating well. Add eggs, one at a time. Add jam and blend in. Mix together the dry ingredients; flour, soda, baking powder, salt and spices. Add to the creamed mixture alternately with the buttermilk. :Pour into 3 greased and floured cake pas. Bake 25 minutes or until done at 300 degrees. Remove from pans, let cool and frost with Caramel Icing.

Caramel Icing:

2 c. sugar

1 small can evaporated milk.

¼ c. whole milk

½ c. sugar

1 stick margarine

Now put sugar and milk in a boiler, let boil a few minutes. Put the other 1/3 c. sugar and the margarine in an iron skillet. Cook stirring constantly until the mixture browns. Add browned mixture to milk and sugar mixture and cook until a soft ball forms when tried into a little cold water. Beat with spoon until cool and thick enough to spread on 3 layer cake.

I think I'll skip the caramel icing. That way I don't feel guilty for eating 2 large slices. LOL

Sounds delish, Ken! My grandmother used to make jelly cakes like this. She would use homemade grape jelly--as everything was homemade in her time--between the layers.

Ever heard of a grape pie? There was this elderly lady who would bake my dad a grape pie once a year. Did it taste good? I can't tell you as my dad would eat the whole pie himself. LOL!
