The Best Chili You Will Ever Eat

I know I keep hearing it , here is the best chili recipe you will ever eat. Well let me tell you about this wonderful chili. It's a easy recipe to make and if you like a spicy full flavored chili then this is probably the chili for you.

I will tell you right up front that this is not the chili for a crock pot or slow cooker. You will want to spend time making this chili and your going to need a good size stock pot to make your chili in. It needs to be cooked and it needs to cook down to be the delicious chili that it can be. If you don't have the time to invest in making this chili look for another recipe. But if you want to make a chili that will truly be some of the best chili you will ever eat then slow down and read the recipe and directions and get ready to make the most delicious chili you will ever eat.

I use hot Italian Sausage for my chili but if you don't like all the heat you can use a mild Italian Sausage to make your chili with. I do suggest you use lean ground beef and fresh ground pork in your chili. I like to use the purple sweet onion in my chili. For your bacon you will want a good brand of lean bacon and you want to cook it until it is almost crisp. Its important that your onion , celery , and green bell peppers be cut up into very small pieces. You want them chopped up into even pieces. If you take the seeds out of your Jalapeno peppers and wash your peppers your chili will have less fire. If you leave the seeds in your chili will be hot.

What I suggest you do is start by cooking 2 pound of bacon diced up very small in a large skillet. Cook your bacon until it is just crisp and remove the bacon but not the grease from the large skillet. You can place the crisp bacon into your large stock pot. Now into that skillet that you have on low to medium heat add the 2 cups onion , 2 cups celery , and 2 cups bell pepper and cook until your vegetables are done but not brown. Once the vegetables are done rake them and the bacon grease into the large stock pot.

Now your going to want to add the below to the large stock pot.

1. 2 28 Ounce Cans Tomato Sauce.

2. 2 28 Ounce Cans Fine Diced Tomatoes.

3. 4 Jalapeno Peppers diced fine with or with out the seeds.

4. 1 Tablespoon Italian Seasoning.

5. 1 32 Ounce Bottle Kraft Honey Barbecue Sauce.

6. 4 Large Cans Kidney Beans washed and drained well.

7. 1/2 Cup of your favorite Chili Powder.

8. 3 1 Ounce Squares Unsweetened Chocolate chopped up fine.

9. 1 Tablespoon Cumin.

Now you will want to bring the stock pot almost up to a boil but not quite and then reduce the pot to a simmer and continue to cook while you cook the below in a large skillet.

1. 3 Pounds Lean Ground Beef.

2. 1 Pound Ground Pork.

3. 2 Pounds Hot Italian Sausage with skins removed and sliced into thin slices.

Cook the above ingredients until all your meat is done. Try not to break up your sliced Italian Sausage any more than necessary. Once you know that your meat is all done drain off any juices and then stir into your other chili ingredients and keep cooking on a low simmer for at least 2 hours. You want your chili to cook down and become thicker.

Again don't try to make this great tasting chili in a crock pot or slow cooker because you will never get it cooked down right. Cook it from start to finish in a large stock pot and you must allow it to cook down until it thickens.

What I do now is cover the stock pot and let it come down to room temperature. Now place in the refrigerator in the stock pot and allow it set for 12 to 24 hours until all the grease in your chili comes to the top. Take a large spoon and carefully remove the grease layer and discard.

You can now return your chili to the stove and heat and serve.

What I do is offer sour cream , guacamole , shredded Mexican cheese , shredded Cheddar cheese , diced onions , and etc on the side in small bowls with my chili so that people can add what they like to their bowls of chili. I offer the corn bread squares with my chili and with the corn bread and side items this is truly the best chili you will ever eat.

This chili is not really that spicy. You can leave the jalapenos out if you wish.
