The perfect fall family roasted pumpkin soup recipe for the appetizer Thanksgiving holiday dinner! The super creamy, delicious and healthy. The recipe is easiest to make with a pumpkin savory and the way to warm up in the fall. Now the pumpkin soup is amazing hearty!

And what could be better than enjoying a large bowl of delicious creamy pumpkin soup while cuddling up with a blanket when it's cold outside and snowy. I don't think anything better than that exists!

It's one of my favorite fall and winter recipes, and my family loves it so much! I've shared my favorite recipe for pumpkin soup now. This homemade soup has more intense flavor, making it exceptionally special and incredibly delectable!

Ingredients

  • 1/4 cup olive oil
  • 1 medium sweet onion, chopped
  • 2 cloves garlic, minced
  • 2 large sage leaves, roll and slice
  • 2 teaspoons fresh ginger, grated and peeled
  • 1/4 teaspoon nutmeg, ground
  • 2 quarts chicken or vegetable broth, low-sodium
  • 3 small roasted pumpkins, puree
  • 1 tablespoon lemon, juiced
  • 1 cup cream
  • oil, fried sage, sea salt, shiitake mushrooms, sliced garnish

Pumpkin and/or butternut squash. Savory makes the pumpkin soup tasty with nutmeg, shiitake mushrooms, sage, onion and garlic.

Instructions

  1. Making the Soup: the 5-quart sauce pot. Start with heating oil on medium. Add onions and salted. Cook 30 minutes for deep golden and stir occasionally. Add the garlic, sage, ginger and nutmeg. Cook 5 minutes or until the garlic is lightly brown. Stirring the ingredients. Add the broth and roasted puree pumpkin. Heat on medium heat. Reduce the heat to simmer and cook during 20 minutes.
  2. Use the Blender or the Immersion: In the blender that smooths the puree soup. Stir in the lemon juice, 1 teaspoon sea salt and add a little bit of black pepper. Make about 8 cups. The soup can be refrigerated up to 2 days. Reheat on the medium stove. If it becomes too thick, add broth for a consistency. Don't forget to add the season to taste.
  3. Create the Garnish: In a small saucepan, heat olive oil on high heat and add the sage leaves for flash-fry for 1 to 2 minutes. Use a slotted spoon and transfer on a paper towel on a lined plate. Sprinkle on a pinch of salt. Add the next batches, slice the shiitake mushrooms and stir fry in the hot oil during 2 minutes in golden brown. Sprinkle in a pinch of salt. Let it cool completely. Let stand the garnish in room temperature. Add the garnishes on the soup bowl.
