"Thai Flower Dumplings" Recipe


Thai flower dumpling is a challenging Thai cuisine recipe as it needs a little bit of artistic ability and perseverance. I think you can tell by the way why I am telling you this and as you see the above picture. Many foreigners or even Thais are amazed by this kind of food which looks like a flower and has an impressive taste. These dumplings are a delicate and well-blend of saltiness and sweetness. One day in the afternoon, I told my niece that I wanted to try this recipe and she agreed with me without any hesitation. It was our challenge for the following day. I was very lucky as I had Blue or Butterfly pea or Dong Un Chan in my garden. It is the most important ingredient for coloring as I did not want to use chemist coloring, especially since I still live in Thailand and have many choices of natural ingredients to make my food look wonderful. In my opinion, I think the most complicated step is making Thai flower dumpling looks a like a flower. My niece and I tried so many times before we were happy about our result. 3 tbsp coarsely chopped garlic

1 tbsp coriander root, chopped finely

1 tbsp pepper

2 tbsp oil

1/4 cups water

2 tbsp fish sauce

3 tbsp sugar

1/4 tsp salt

Preparation (Step one)

  • Pound coriander roots, garlic and pepper finely to obtain a smooth paste.

1/2 cups of minced prawn or chicken

  1. Saute' the mixture prepared in step 1 until it is fragrant then add mince prawn or chicken
  2. season with fish sauce and sugar and saute' until well done.


Rice flour 1/2 cup

Tapioca starch 2 tbsp

Glutinous flour 2 tsp

Arrowroot 2 tsp

Water 1/2 cup for kneading


  1. Combine all the ingredients together and set aside.


10 -15 of Blue or Butterfly pea

1/2 tsp of Lemon juice

1 cup of Warm water


  1. Add warm water in the blue or butterfly pea and waiting until we get the colouring (gentle squeeze is ok) then remove the flower.
  2. Add lemon juice in the purple colour water then add it into ready flour that we set aside.
  3. Knead them until a dough forms.
  4. Shape into small balls about 3 cm in diameter. Continue shaping unitl finished.
  5. Shape small balls look like flower (please follow the below video) then steam them over boiling water on high heat for 5-10 minutes or until done.*** Do not forget to apply oil on the streamer for "non-stick".
  6. Remove from the streamer, garnish with whatever you want.

Wow! These look fabulous. What a coup it would be for me to pull that off... I may just try it. I'll have to find out what you mean by steaming the "flowers" over boiling water. You don't mean in boiling water?

Sorry if that question seems odd but I am not a great cook. Something artistic, though, gets me excited about cooking. These are beautiful!!! Voted up and all the others--even funny because of how you were humbly learning to form the roses. :) Am going to look to see if you have other hubs.
