This is a simple and amazingly unique appetizer idea. Escargots are an interesting dish when not breaded, but not everyone appreciates how they look. This is a recipe that allows you to serve your guests something different and upscale, without the concern of whether or not the appearance will put them off from trying some.

Note that canned escargots are recommended, this as they are already cleaned and prepared. Believe me when I say that not too many would believe fresh escargots to be worth the grief and hassle of preparation.

Such an appetizer is ideal for evenings where there is an air of formality and also a when there's a wide range of people attending, such as retirements, graduations, promotions, anniversaries, holiday get togethers, etc.

To simplify writing up the recipe, a batch of Deep Fried Breaded Escargots refers to sixteen pieces. Recommended serving size is 6-8 pieces per person.

  • 16 pieces of canned escargots.
  • One raw egg.
  • 1 1/2 ounces of milk.
  • 1/2 cup of breadcrumbs.
  • Enough flour to dredge all escargots (a couple of ounces).
  • Optional - 1 ounce of finely chopped almonds.
  • 1/2 cup tartar sauce, per batch.
  • 1/8 teaspoon (or to taste) garlic powder.
  • 2 teaspoons (or to taste) lemon juice.
  • Optional- perhaps add a fancy garnish, choice suggestions: green onion, parsley, tomato, lettuce.

  1. Before working on the escargots, estimate how much sauce you will need based upon how many batches you intend to prepare. Mix the tartar sauce, lemon juice and garlic powder together thoroughly. Place in the refrigerator.
  2. Take the canned escargots and put them in a strainer, rinse thoroughly. Remove from the strainer, then blot them lightly with paper towel.
  3. Once blotted, dredge the escargots thoroughly in flour. They should be fully covered but not caked with flour.
  4. Break the egg into a bowl and add the milk. Whisk them together.
  5. If you wish you can replace some of the breadcrumbs with an equal amount of finely chopped almonds.
  6. Roll each escargot in the egg/milk mixture, then roll in the breadcrumbs, or breadcrumbs and almonds as you have chosen. Repeat one at a time with all escargots.
  7. Once all pieces are breaded, you may if you wish, leave them sit aside for a short while in the fridge, to allow them to dehydrate on the surface a bit. This assures better adhesion of the breading during frying. 15 mins or so would suffice.
  8. Preheat a wok or deep fryer with deep oil to a temperature appropriate for deep frying.
  9. Carefully add the breaded escargots into the heated oil and fry until deep golden brown. Keep in mind that escargots are small and cook quickly; you don't want to overcook them as it will detract from the texture.
  10. Drain the excess oil from the escargots by sitting them on paper towel.
  11. They are now ready to serve with the Lemon Garlic Dipping Sauce you have in the fridge, and if you wish, why not garnish the platter you serve them on as you see fit... dazzle your guests as you feed them!
