My family has a love for pasta but to me sometimes pasta dishes with all the sauces can be on the heavy side just think about it, the pasta, the sauce alone makes it rich and hardy. So, what I want to do is change the pasta into a lighter version of a pasta dish.


By making a few changes were going make this dish pop with flavor and have you coming back for more. By putting my spin on to this dish I wanted to add really bold flavors and I want it to be the Freshness ingredients I could get my hands on, fresh herb, veggies and pasta's, along with some great quality oils.


I really believe food should be made simple but with lots of flavor, Let's be honest how good is a good-looking dish if it does not have flavor or any flavor at all, But to make that flavor happen you have to have good ingredients. To me good ingredients mean better tasting food.


But that's just my opinion. Fresh pasta served with good ingredients will give you a winning and really tasty dish and believe me who ever you're going to feed it to will also agree it all starts right there in what you use to put it all together, And if you're using all fresh food you're in for a treat.


The star of this dish is Linguine pasta and the main co-stars are the cherry tomatoes and goat cheese let me give you a little information about these great ingredients for this Linguine and Tomato Pasta with Goat Cheese.

Like I have said it's the ingredients that makes this dish really stand out in the crowd, the freshness and overall flavors is the reason it is going to be so good.


What we are going to do is use the tagliatelle pasta, It's an Italian pasta that long like spaghetti and flat, its made with eggs and flour only no water added, I like it because its a firm pasta and holds it shape when cooked.


We are also using cherry-tomatoes they are perfect for this dish, There a small tomato that has a shape like Bing cherries and they are juicy and have very good flavor and if you sauté them, it brings out the total sweetness that takes then up another notch, and they are also healthy as well.


The other co-star of this dish is the fresh goat cheese which is made from raw goats' milk that is pasteurized goats' milk to me has a mild tart taste and when it's paired with the sweetness of the cherry tomatoes it will make this dish pop. The goat cheese I use is fresh Vermont Creamy Goat Cheese, to me it's one of the best.

My typical pasta dish starts with very simple, very fresh ingredients all blended in together to make one good tasty dish and that's what I am going to do while making this Linguine and Tomato Pasta with Goat Cheese is show you how to do just that, So come on and follow me, You're going to love it.

Ingredients
1 pound of fresh Linguine pasta

8 ounces of fresh Vermont Creamy Goat Cheese

1 1/2 pints of cherry tomatoes (cut in half)

3 cloves of garlic divided (minced) (1 clove of garlic separated from the others)

1/3 teaspoon of white sugar

1/3 cup of extra virgin olive oil

2 tablespoons of butter

Sea salt to taste

Cracked black pepper to taste

1 cup of finely chopped basil

8 cups of chicken stock (this is for cooking your Linguine pasta)

Methods

Now that we have all of our ingredients let's put this recipe together, using a large heavy-duty tall pot add your chicken stock and a pinch of sea salt and follow the instructions on the package on the fresh Linguine pasta and remember to taste as you get closer to your doneness. I am using the chicken stock as my boiling liquid for my linguine so it can add more flavor to the pasta as it is cooking.

While the pasta is boiling, get a heavy-duty frying skillet on medium heat add 1 tablespoon of butter made sure it covers the entire skillet not add the cherry tomatoes,

The reason for this is to bring out the sweetness of the cherry tomatoes and to start the layering of flavors as we cook, sauté the cherry tomatoes 3 to 4 minutes the add the 2 cloves of minced garlic and mix in to blend with the tomatoes stirring for another minute and turn down the heat to low on the lowest setting but make sure not to burn the ingredients.

Going back to your paste drain your pasta, now add the pasta to the cherry tomatoes and garlic along with the remaining tablespoon of butter, then add the rest of the ingredients the basil, fresh garlic, white sugar the sea salt and cracked pepper.

Now continue to add the olive oil and toss so all of the ingredients blend in together taste to make sure it has the flavor you want, if need be, add more sea salt and cracked black pepper. Now add the pasta dish into a nice glass serving bowl then add your goat cheese crumble toss just a little to blend in then served and enjoy,
