-One pound of Brussels sprouts, trimmed and quartered

-One large sweet potato, peeled and diced into small pieces

-Two tablespoons olive oil, divided

-One teaspoon chili powder

-Half a teaspoon smoked paprika

-Salt and pepper to taste

-Four salmon fillets (skinless)

-One and a half tablespoons honey

-Half a teaspoon Dijon mustard

-One clove of garlic, minced

Instructions:

Step One: Preheat your oven to 400 degrees Fahrenheit. In a large bowl, toss the Brussels sprouts, sweet potatoes, one tablespoon of olive oil, chili powder, smoked paprika, salt, and pepper. Spread the mixture onto a baking sheet and roast for 25 minutes.
