Biryani is a very popular dish is among the Swahili people of Kenya. The cuisine is meat based, and it is important to find the right kinds of rice, spices, meat and herbs. It is simply steamed rice eaten with Biryani stew. Biryani is prepared using the fragrant species of rice.

Biryani stew is a traditional dish among the Swahili. It contains meat and is spiced to produce a spicy delicious. It is served as a main dish, usually accompanied by biryani rice.

Ingredients for the Biryani Rice

For the Biryani:

  • 5 3/4 cups (1 kg) white rice, raw
  • 8 2/3 (1874 g) water
  • 1 gram food colour, powder,egg yellow
  • 2 teaspoons (10 g) salt, iodized
  • 7 tablespoons (85 g) cooking oil

For the Biryani Stew:

  • 1 kg beef, medium fat
  • 2 potatoes, unpeeled irish, white, raw (454 g)
  • 9 (1.1 kg) tomatoes, red, ripe
  • 1 cup (163 g) tomato, paste, salted
  • 1 bunch (60 g) coriander, fresh
  • 1 (242 g) capsicum green
  • 2 1/3 cups (468 g) cooking oil
  • 1 piece (20 g) ginger
  • 1 (46 g) garlic, whole
  • 2 ½ tbsp. (37 g) salt, iodized
  • 4 tbsp. (18 g) pilau masala
  • 1 cup (242 g) maziwa mala (fermented milk)
  • 1 ¼ tsp. (2 g) turmeric, powder
  • 2 ¼ cups (511 g) water

Instructions

  1. Remove 2 tablespoons of water and pout the remaining water into a cooking pot, add salt and let it boil.
  2. Wash the rice and add into the boiling water. Cover the cooking pot and cook for 10 minutes.
  3. In the meantime, mix the food colour in the 2 tablespoons of water.
  4. Add the cooking oil and cook for another 2 minutes.
  5. Add the food colour and simmer for 13 minutes.
  6. Remove from the heat and set aside.
  7. Serve with biryani stew.

Biryani rice and Biryani stew

  1. Wash the meat and chop it into small cubes.
  2. Boil the meat in 1 cup of water for 20 minutes until the meat is tender.
  3. Prepare and put coriander, capsicum, garlic, ginger, and tomatoes into a blender and blend to a medium-thick paste. Add 1 ¼ cups of water.
  4. Peel, wash and chop the onions and place them in a separate bowl.
  5. Pour the cooking oil into a cooking pot and heat for 1 minute.
  6. Add the chopped onions.
  7. Cook onions until they turn golden brown.
  8. Add the blended paste and stir thoroughly.
  9. Add meat, potatoes, tomato paste, turmeric, pilau masala, and salt.
  10. Cover and simmer until the potatoes are cooked or tender.
  11. Add the fermented milk and continue to simmer for 5 minutes.
  12. Stir and remove from the heat.
  13. Serve with the biryani rice.
