Stuffed Capsicums ready to be served
Stuffed Capsicums ..... recipe
Medium size green Capsicums 4
Medium size Potatoes 4 boiled, peeled and mashed
Onion 1 sliced
Carrot grated 1
Green Peas 1 handful
Green Chili 1 finely chopped
Coriander 1 bunch
Mint leaves 1 bunch
Other Ingredients :
Vegetable Oil 3 tbspns
Mustard Seeds 1 tspn
Cumin Seeds 1 tspn
Asafoitida ½ tspn
Red Chili powder 1 tspn
Turmeric powder ½ tspn
Coriander powder 1 tspn
Ginger – Garlic paste 1 tspn
Salt to taste
Frying the stuffed side first
Wash and then cut the Capsicums lengthwise so as to make 8 halves. Remove all seeds.
For the stuffing : To mashed potatoes add all the vegetables and salt.
In a fry pan heat a little oil. Add mustard seeds and cumin seeds, and when the seeds splutter add asafoitida and ginger – garlic paste. Fry on low heat with constant stirring till you get a rich smell. Quickly add red chili powder and turmeric powder and remove from the flame.
Add this tadka to the mashed potatoes and mix well with hands. Fill up this stuffing in the Capsicum halves.
Heat remaining cooking oil in a fry pan on medium flame. Carefully place the stuffed Capsicums face down in the pan. Cover lid. Let it cook for 5 minutes. Open the lid and flip all the capsicum halves. Cover lid and let it cook for 5 minutes. Both sides will be cooked and the stuffing side will be a rich golden brown color.
Serve hot with roti or bread. Makes a great dish in lunch or dinner.

Today, ie on tuesday the 1st November 2022 morning I have cooked stuffed capsicums for the lunch boxes. The same recipe was applied while cooking. Today's result was much better than the previous one. The ready to serve photo is posted.
