1/2 teaspoon sea salt divided
1/4 teaspoon of grounded crack black pepper
8 ounces diced spicy cooked left-over pork chops (I use 2 - 4-ounce chops)
1/2 cup diced onion
1/4 cup diced carrots
1/4 cup fresh or frozen peas
1/4 cup sliced green onions (divided optional as using as a garnish but suggest using it in the cooking)
2 tablespoons minced garlic
1 tablespoon minced peeled fresh ginger
3 cups cooked brown rice chilled
2 large eggs lightly beaten (optional)
1 tablespoons soy sauce
1 teaspoon dark sesame oil

Methods

Place your frying pan over a medium high heat, then add 2 tablespoons of olive oil to the pan, swirl to coat the pan, When your pan is heated up add your onions and carrots so they can start sauteing for a few minutes so they can brown just a little bit.

At this point add the remaining olive oil into pan and add rice, pork, garlic and ginger and continue stirring another 1 to 2 minutes, Add his point add 1/2 of green onions and peas, cook without stirring until they are starting to brown.

Now if you're going to add you egg mixture to the fried rice let do this make a well in the center of the fried rice while its cooking and add the egg mixture and start stirring until the eggs are soft-scrambled,.

When the eggs are scrambled stir in the sea salt, soy sauce, sesame oil and cracked black pepper then remove from heat let cool for a few minutes then toss in the remaining green onions, but remember they are optional then serve and enjoy.

Now if you no going to use the egg mixture just skip that part and continue on with the recipe., Either way you're going to enjoy this tasty dish
