Years ago, there were smelt fry's. It seems like a long, long time ago, but truly, probably just five years ago.
Although, smelt fry's used to be a thing.
Now, I guess I have to fry my own.
I decided to keep them frozen. I prepared my three bowls. Bowl one contains a fry magic coating mix. Bowl two contains a raw egg with some water. Bowl three has some finely chopped oyster soup crackers.
Put the frozen smelt in a container. Fill container with water. Coat wet smelt with fry coating mix, then coat with wet egg, then roll in crackers.
Deep fry four minutes, frying until a dark brown color.
