Low-Calorie Cafe Mocha with Stevia - Vegan and Sugar-Free!
One of my favorite combinations is coffee and chocolate, hence my love of the cafe mocha. Unfortunately, ordering one at a coffee shop can mean a lot more refined sugar, fat, and calories than I bargained for, which is why I came up with the following recipe for a delicious low-calorie version that's also vegan and sugar-free. Depending on how much soy milk you use, you can enjoy one of these for well under 60 calories!

Ingredients
- 8 oz black coffee, OR
- 1-2 shots of espresso, (espresso is more authentic, but strong coffee is fine)
- 2 tbsp cocoa, (pure, unsweetened)
- 4 oz or less of light soy milk, (I recommend Silk Light soy milk because it's sweetened with stevia)
- 1-2 packets of stevia, (equals about 1-2 tbsp sugar)
- pinch of salt
- 1/4 tsp flavor extract, ie vanilla or peppermint, (optional)
Instructions
- Prepare coffee using preferred method (espresso is traditional, but if you don't have an espresso maker, then strong drip coffee or French press works fine)
- Mix cocoa, stevia, salt, and optional flavor extract(s) of choice in a heatproof mug
- Heat soy milk in a separate container until almost boiling (about 45 seconds to 1 minute on high in the microwave or a couple minutes on the stove) **If you have a milk frother, you can also froth the soy milk at this time
- Slowly add the coffee or espresso to the dry ingredients and gently stir
- Carefully mix in the soy milk and enjoy
- **You can garnish with a sprinkle of cinnamon, nutmeg, or cocoa if you like
- TIP: This drink also tastes great over ice!
