Delicious Crispy Cookies

Miriam is an enthusiastic cook. At 13 years old she would bake cakes for her young siblings and parents and they loved them.

Cookies is a snack which is simple to prepare and bake. It takes approximately 40 minutes. This recipe is a must try at home.

Vanilla Cookies

Ingredients

  • 2 cups all-purpose floor
  • 11/2 cup granulated sugar (Put to your taste)
  • ½ cup butter, melted
  • 11/2 teaspoon baking powder
  • ½ teaspoon salt
  • 1teaspoon vanilla extract
  • 4 tablespoon milk

Directions

  • In a large bowl, or stand mixture, mix the flour, Salt, sugar and baking powder. You can also use a wooden spoon to mix.
  • Pour the melted butter and vanilla. Mix them with the dry ingredients to form a dough.
  • Add the milk and continue mixing. Once the dough has good consistency, take a cookie cutter and cut the desired shape of cookies.
  • Note: The milk is the wet ingredient so if 4 table spoon in the recipe is not enough, add until desire consistency is achieved.
  • Prepare the cooking tray by applying small amount of solid oil. Spread it over the tray and put flour for dusting. Dusting helps the cookies not stick in the cooking tray.
  • Put on the cooker temperature at 1800C. Different cookers have different temperatures so study your cooker to understand its temperature settings.
  • Once the temperature is on wait for five minutes and then put the cookie tray in the cooker. The cooking is around 10-15 minutes.
  • Make sure they turn brown. To test if the cookies are ready test with a toothpick. If the tooth pick is struggling to be inserted in the cookie, then it is ready. Otherwise if the toothpick has dough around it continue cooking.
  • Once ready, remove the cookies from the cooking tray and put them aside to cool.
  • Serve with your favorite juice or tea. These cookies may be used for breakfast or in-between meals as a snack.

Chocolate cookies

Ingredients

  • 2 cups all-purpose floor
  • 11/2 cup granulated sugar (Put to your taste)
  • ½ cup butter, melted
  • 11/2 teaspoon baking powder
  • 3 eggs
  • ½ teaspoon salt
  • 1teaspoon vanilla extract
  • 4 tablespoon milk
  • Chocolate chips
  • ¼ cup natural cocoa

Directions

  • In a large bowl, mix the dry ingredients, flour, Salt, sugar and baking powder, cocoa. In the stand mixture pour the eggs, sugar and vanilla.
  • Mix them until well combined. If using wooden spoon, mix the wet ingredients until they mix and sugar is almost dissolved
  • In another bowl, add the chocolate chips and melt them in the microwave. Mix them until the chocolate dissolves.
  • Once a good consistency is obtained, pour the mixture in to the egg mixture. Mix slowly until well combined. Add the dry ingredients little by little and mi slowly.
  • Once the dough is combined, remove from the mixture from the mixing stand and wrap it in with a plastic wrap and keep it in refrigerator for 2 hours.
  • Once the dough feels firm, remove from the fridge and cut into desired shape.
  • Prepare the cooking tray by applying small amount of solid oil. You can also use spray to spread the oil. Spread it over the tray and put flour for dusting. Dusting helps the cookies not stick in the cooking tray.
  • Put on the cooker temperature at 1800C. Different cookers have different temperatures so study your cooker to understand its temperature settings. Once the temperature is on wait for five minutes and then put the cookie tray in the cooker.
  • The cooking is around 15-20 minutes. Make sure the cookie feels firm when you press. A tooth pick will also serve the same purpose.
  • To test if the cookies are ready test with a toothpick. If the tooth pick is struggling to be inserted in the cookie, then it is ready. Otherwise if the toothpick has dough around it continue cooking.
  • Once ready, remove the cookies from the cooking tray and put them aside to cool.

Frosting

The cookies can also be covered with frosting. Prepare butter cream frosting as follows;

Ingredients

  • Take 1 cup of icing sugar
  • 1 teaspoon of lemon juice or your preferred flavor
  • Use 3 tablespoon unsalted butter.

Directions

  • Mix the unsalted butter with lemon juice or according to preference. Add icing sugar slowly, mixing it until you get the required consistency.
  • Apply on top of the cookies. Enjoy
