A Greek Salad That's Simple & Delicious

Add this salad as an easy lunch or side for a busy weeknight meal. This is simple enough to throw together or make ahead for a refreshing side. I like to enjoy this salad with kalamata olives but feel free to use green olives, black olives or any olives really. This goes for the feta as well - you can use fat-free, marinated feta, cubed shaped, or a block that you crumble yourself. For a heartier or more filling salad, top it with a protein of your choice or pair it with a sandwich or soup for a fun summer meal.

Serves 4 as a side salad

Salad & Salad Dressing Ingredients

  • 4 cups romaine lettuce, chopped
  • 4 ounces feta cheese, crumbled
  • 16 kalamata olives, pitted and sliced
  • 1/2 red onion, sliced thin
  • 1/4 cup etra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • salt and pepper, to taste
  • 1/2 teaspoon dijon mustard
  • 1 carrot, spiralized into thin strips


  1. Place romaine in a bowl. Top with Red onion, carrots, olives, feta, salt and pepper
  2. Make dressing by combining remainder of ingredients and stirring until they are fully mixed together.
  3. Pour over salad and mix gently.
  4. Optional additional ingredients: sliced cucumber, halved cherry tomatoes, and salami.
